[Lunchbox] Super Simple Ham and Vegetable Fried Rice
My son specifically requested fried rice for his lunchbox, so I made a simple version using ingredients I had at home. This recipe is perfect for a quick and satisfying meal, packed with colorful vegetables and savory ham.
Main Ingredients- 1/4 onion (finely chopped)
- 7 slices of enoki mushroom (sliced)
- Ham (desired amount, diced)
- Frozen vegetable mix (carrots, peas, corn, etc.) 1 handful (appropriate amount)
Seasoning & Others- 3 pinches of salt (or adjust to taste)
- Pinch of black pepper
- 1/2 Tbsp tuna extract (or soy sauce)
- 1-2 Tbsp oyster sauce (adds depth of flavor)

Cooking Instructions
Step 1
Get creative with any leftover vegetables you have in your fridge! I ran out of fresh carrots, so I used a block of frozen vegetable mix. Finely julienne any vegetables in the mix for even cooking. Dice the ham into bite-sized pieces so it integrates well into the fried rice.
Step 2
Heat 2 tablespoons of cooking oil in a frying pan over medium heat. Add the chopped onion, mushrooms, diced ham, and frozen vegetable mix. Stir-fry until the vegetables are softened and fragrant. Season with 3 pinches of salt and a pinch of black pepper, continuing to stir-fry. Be mindful of the heat to prevent burning.
Step 3
Prepare 2 bowls of freshly cooked, warm rice. This amount typically serves about 3 people in our household. Using slightly drier, ‘go-so-gol’ (fluffy) rice is ideal for fried rice as it prevents it from becoming mushy.
Step 4
Add the 2 bowls of cooked rice to the pan with the stir-fried ingredients. Using two spatulas, gently break up the rice and stir-fry to combine it evenly with the vegetables and ham. Ensure the rice is well coated and heated through. Once everything is nicely mixed, add 1/2 tablespoon of tuna extract and 1-2 tablespoons of oyster sauce. Stir well to adjust the final seasoning to your liking. You can adjust the amount of oyster sauce based on your preference.
Step 5
For an extra touch, you can fry an egg and place it on top of the fried rice. A sunny-side-up or over-easy egg adds a lovely richness! If you don’t have eggs or prefer it without, the fried rice is delicious on its own. Pack the finished fried rice into your lunchbox. A drizzle of ketchup just before serving can add a delightful tang.
