  • Kimchi (chopped into bite-sized pieces, about 2-3 handfuls)
  • 1/2 stalk Green onion (finely chopped)
  • Cooking oil (as needed)
  • Sugar (1/2 tsp, to balance the sourness of kimchi)
  • Oyster sauce (2/3 Tbsp, for added umami)

Cooking Instructions

Step 1

Kimchi that is moderately fermented, not too spicy, works best for fried rice. Chop it into bite-sized pieces. I prepared about 2-3 handfuls for a good texture, but you can adjust the amount according to your preference.

Step 2

Prepare 3 Johnsonville sausages and chop them into slightly smaller pieces than bite-sized. Finely chop the green onion to prepare for making aromatic green onion oil.

Step 3

Heat cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry until the aroma of the green onion is released and the oil is infused with its flavor. This step is crucial for building a flavorful base.

Step 4

Once the green onion oil is fragrant, add the chopped kimchi and ham. Stir-fry them together over medium heat until the kimchi becomes slightly translucent and the ham turns a appetizing color. Ensure everything is well combined.

Step 5

When the kimchi starts to release its flavorful oils, add 2 servings of rice. Stir-fry quickly using a spatula, being careful not to mash the rice grains. The key is to mix the rice evenly with the kimchi and ham so the flavors meld together.

Step 6

If it seems to need more seasoning, add 2/3 Tbsp of oyster sauce and stir-fry a bit more. Oyster sauce adds a rich umami flavor and a glossy sheen, enhancing the overall taste of the fried rice. You can also add about 1/2 tsp of sugar to balance the kimchi’s sourness.
