I wanted to create a delicious dish using ginseng, so I tried this recipe. This recipe offers a healthy and flavorful way to enjoy the goodness of ginseng in fresh spring rolls, perfect for a light meal or appetizer.
Main Ingredients- Beef 300g
- Bell Peppers (various colors) 100g
- Perilla Leaves 4 sheets
- Onion 50g
- Pickled Radish 4 slices
- Fresh Ginseng 1 root
- Rice Paper Wrappers 5 sheets
- Pepper pinch (1 pinch)
- Corn kernels 10g
Dipping Sauce Ingredients- Fresh Ginger 10g
- Soy Sauce 2 tsp
- Oligosaccharide 2 tsp
- Water 0.5 tsp
- Fresh Ginger 10g
- Soy Sauce 2 tsp
- Oligosaccharide 2 tsp
- Water 0.5 tsp
Cooking Instructions
Step 1
1. Prepare all your ingredients by washing them thoroughly. Thinly julienne the bell peppers (using a variety of colors will make the rolls visually appealing), fresh ginseng, perilla leaves, pickled radish, and onion. For the ginseng, you can lightly peel it or simply scrub it clean. To easily julienne the perilla leaves, roll them up tightly before slicing.

2. Prepare a shallow bowl of warm water. Dip one sheet of rice paper into the warm water until it becomes pliable, then carefully lay it flat on your work surface. Arrange your fillings – the thinly sliced beef, julienned bell peppers, perilla leaves, onion, ginseng, pickled radish, and corn kernels – attractively on the rice paper. Fold in the sides and then tightly roll everything up from the bottom to create a neat spring roll.

3. To add a delightful crisp texture, lightly brush the surface of the assembled spring rolls with cooking oil. Place them in an air fryer set to 200°C (392°F) and cook for 5 minutes. This will lightly toast the rice paper, giving it a subtle crispness that complements the chewy texture. (Adjust cooking time based on your air fryer’s performance).

4. Let’s make the dipping sauce. In a small bowl, combine the oligosaccharide and soy sauce in equal parts (1:1 ratio).

5. Add the 0.5 tsp of water to the soy sauce and oligosaccharide mixture and stir well. Thinly slice the fresh ginger and add it to the sauce. Gently simmer this mixture over low heat until it reaches your desired consistency. The ginger will infuse the sauce with its aromatic flavor. Remove from heat once thickened.
Step 6
6. Arrange the freshly prepared spring rolls on a serving plate. Drizzle the ginger-infused sauce over the spring rolls or serve it on the side for dipping. Enjoy this healthy and flavorful fresh spring roll, a delightful combination of fragrant ginseng, crisp vegetables, and tender beef!
