Main Ingredients- 1 bowl of warm rice
- 100g minced pork (can be substituted with ground beef or chicken)
- 1 eggplant (medium-sized)
- 1 bell pepper (green or red for color)
- 1/3 carrot
- 1/2 green onion (finely chopped)
- 1 teaspoon grated ginger
- 1 tablespoon minced garlic
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
Seasoning Ingredients- 1 tablespoon miso paste (use regular miso in small amounts if unavailable)

- 1 tablespoon soy sauce
- 2 tablespoons cooking sake (mirin)

Cooking Instructions
Step 1
First, heat a pan over medium heat and add 1 tablespoon of vegetable oil. Once the oil is hot, add 1 tablespoon of minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
Step 2
As the garlic becomes fragrant, add 1 teaspoon of grated ginger and sauté together. The aromatic ginger will help eliminate any gamey smell from the pork.
Step 3
Once the ginger and garlic are well-sautéed, add 100g of minced pork. Break up any clumps and stir-fry until the pork is partially cooked. Then, add 1 tablespoon of sugar, 2 tablespoons of cooking sake, 1 tablespoon of soy sauce, and 1 tablespoon of miso paste. Stir well to ensure the seasonings coat the pork evenly.
Step 4
When the pork is about halfway cooked, add the diced carrot, bell pepper, and eggplant to the pan. Stir-fry everything together, making sure the vegetables are well mixed. Cook until the eggplant becomes tender.
Step 5
Once the eggplant and other vegetables are tender, add the chopped green onion and stir-fry for about 1 more minute. The sweetness and aroma of the green onion will enhance the overall flavor of the dish.
Step 6
Finally, just before turning off the heat, drizzle in 1 tablespoon of sesame oil and give it a final stir. This will create a delicious eggplant stir-fry with a wonderful nutty aroma.
