Sandwich Base Ingredients

  • 2 slices of deli ham
  • 2 slices of cheddar cheese

  • Cream cheese, as needed (for spreading)
  • 1 handful of finely chopped onion (for egg salad filling)

* Creamy Egg Salad Filling *

  • 2-3 hard-boiled eggs
  • 2-3 Tbsp mayonnaise
  • Pinch of black pepper
  • 1/2 Tbsp oligodang (or honey/sugar for sweetness)
  • 1 pinch of salt

* Refreshing Cucumber Mayo Filling *

  • 1/2 cucumber
  • 1/2 tsp salt (for cucumber salting)
  • 1 Tbsp mayonnaise
  • 1/2 tsp honey mustard (for extra flavor)
  • Pinch of black pepper

Cooking Instructions

[Prepare Cucumber Mayo] First, wash the cucumber thoroughly. Rub with coarse salt to remove any bumps, then slice it in half lengthwise and scoop out the seeds. Thinly slice the cucumber into strips and place them in a bowl. Sprinkle with 1/2 tsp of salt and let it sit for 5-10 minutes to draw out moisture. After salting, gently squeeze out excess water using paper towels.

To the drained cucumber, add 1 Tbsp mayonnaise, 1/2 tsp honey mustard, and a pinch of black pepper. Mix well. This creates a refreshing cucumber filling with a pleasant crunch.

[Remove Onion’s Pungency] Place the finely chopped onion in a bowl of cold water and soak for about 5 minutes to reduce its sharp, pungent taste. Drain the onion thoroughly using a sieve. This step ensures the onion adds sweetness without overpowering the sandwich.

[Make Egg Salad] Mash the hard-boiled eggs using a masher or a fork until smooth. In a separate bowl, combine the mashed eggs with 3-5 Tbsp mayonnaise, a pinch of black pepper, 1/2 to 1 Tbsp oligodang (adjust to your sweetness preference), and a pinch of salt. Mix everything together well. Add the drained chopped onion to the egg mixture and stir again to combine. Your delicious egg salad filling is now ready!

Now, let’s prepare the other sandwich components. You’ll need 2 slices of deli ham, 2 slices of cheddar cheese, and 1 tomato, thinly sliced. Although not pictured, also have your cream cheese and 6 slices of rye bread ready.

Let’s assemble the sandwich! Spread a thin layer of cream cheese on one side of a slice of rye bread. Layer a slice of cheddar cheese, followed by the cucumber mayo filling. Place another slice of rye bread (with cream cheese spread on both sides) on top. Then, add the sliced tomato, a generous portion of the egg salad filling, and finally, the ham slices.

Top everything with the remaining slice of rye bread, which should have cream cheese spread on only one side. Trim the crusts neatly with a bread knife for a clean presentation. Wrap the sandwich tightly in parchment paper or plastic wrap to hold its shape.
