A fantastic dish for when you can’t be bothered to cook a full meal. Quick, satisfying, and utterly delicious!
Ingredients- 2 slices of bread
- 4 eggs
- 2 slices of cheese
- A pinch of salt
Cooking Instructions
Step 1
First, gather all your ingredients. You’ll need two slices of bread, four eggs, two slices of cheese, and a little bit of salt.
Step 2
Crack two of the eggs into a bowl. Add a pinch of salt for seasoning. Whisk the eggs gently until they are well combined. Don’t worry about making them perfectly smooth or straining out the chalazae (the white stringy bits) as you might for scrambled eggs or soufflés. Even if the yolk and white aren’t fully blended, it will still be delicious.
Step 3
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Spread the whisked egg mixture thinly and evenly across the pan. Before the egg sets, place one slice of bread in the center of the egg. Placing the bread while the egg is still wet helps it adhere, making it easier to fold later. Once the egg starts to cook, carefully fold the egg over the bread, like folding a piece of paper, to form a sandwich. If it’s tricky to fold or the shape isn’t perfect, you can use your spatula or cooking tool with both hands to help guide the fold.
Step 4
Keeping the heat on medium-low, place one slice of cheese on top of the folded egg and bread. Then, carefully fold the second slice of bread over the cheese. If the bread slides or is difficult to fold, use your spatula(s) to gently press and guide it into place. A helpful tip: after placing the bread on the egg and before folding, you can lightly press down the center of the bread with your spatula, as if making a cut, to make folding it in half much easier. Repeat this process to make the second toast.
