  • 1 Onion (sliced)
  • 1 Scallion (cut into large pieces)
  • 2 Handfuls Chives (cut into 5cm lengths)

Seasoning Sauce

  • 2 Tbsp Gochujang (Korean chili paste)
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Perilla seed powder
  • 2 Tbsp Maesilcheong (plum syrup)
  • 1 Tbsp Sugar
  • 2 Tbsp Deulgireum (perilla oil)

Pre-Marinating Ingredients

  • 2 Tbsp Soy sauce
  • 1.5 Tbsp Minced garlic
  • 1 Tbsp Ginger syrup (or grated ginger)
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Black pepper

Cooking Instructions

Step 1

First, gently pat dry the fresh duck loin slices with paper towels and cut them into bite-sized pieces. Place the duck in a bowl and add all the pre-marinating ingredients (soy sauce, minced garlic, ginger syrup, mirin, black pepper). Mix well with your hands and let it marinate for 10 minutes. This step helps to remove any gamey odor from the duck and adds a foundational flavor.

Next, add all the seasoning sauce ingredients (gochujang, gochugaru, perilla seed powder, maesilcheong, sugar) to the duck. Mix thoroughly again with your hands, ensuring the marinade coats every piece of duck evenly. Proper mixing is key for the flavors to penetrate.

Finally, add 2 tablespoons of perilla oil and the sliced onion and large pieces of scallion. Mix them lightly. Once everything is well combined, cover the bowl with plastic wrap and refrigerate for at least 2 hours to marinate further. This resting period allows the flavors to meld and deepen, resulting in a more delicious duck bulgogi.

Heat 2 tablespoons of perilla oil in a pan over medium heat. Add the marinated duck bulgogi generously to the pan. Stir-fry for about 5 minutes until the duck is partially cooked and lightly browned. It’s important not to overcrowd the pan; cook in batches if necessary to ensure the duck fries rather than steams.

When the duck is almost cooked through, add the chives cut into 5cm lengths. Reduce the heat to low and continue to stir-fry for another 5 minutes. Chives can become mushy if overcooked, so adding them towards the end and cooking just until they wilt slightly will retain their fresh, crisp texture. This is a great tip for a better texture!
