- Bell peppers (yellow and red), thinly julienned
- Fresh perilla leaves (깻잎), washed
- Bean sprouts (무순), washed and drained
- Enoki mushrooms, trimmed and separated
Cooking Instructions
Step 1
First, prepare the fresh vegetables that will be rolled inside the duck belly. Feel free to use any vegetables you enjoy! I’ve used yellow and red bell peppers, perilla leaves, bean sprouts, and enoki mushrooms. Julienne the bell peppers thinly for a vibrant color. Wash the perilla leaves thoroughly. Rinse the bean sprouts and pat them dry. Trim the woody ends of the enoki mushrooms and gently separate them into smaller clusters.
Step 2
You can easily find thinly sliced duck belly at most large supermarkets. Lay out one slice of duck belly at a time. Place a portion of your prepared vegetables (bell peppers, perilla leaves, bean sprouts, enoki mushrooms) onto the duck belly. Then, carefully roll it up tightly, similar to making a sushi roll, ensuring the vegetables stay securely inside. Rolling them firmly prevents them from falling apart during cooking. Make several rolls ahead of time for easier preparation.
Step 3
Duck belly releases a generous amount of its own delicious fat, so there’s no need to add any extra oil to the pan. Heat a non-stick skillet over medium heat. Place the duck belly rolls in the pan and cook, turning them occasionally, until golden brown and slightly crispy on all sides. You’ll know they’re ready when they’re beautifully browned and have a satisfying sizzle. If too much fat accumulates, you can carefully dab it away with a paper towel as you cook.
Step 4
Now, let’s prepare the flavorful sauce. In a small bowl, combine soy sauce, mirin, and sugar in a 1:1:1 ratio. Stir well until the sugar is completely dissolved. While the duck rolls are cooking in the pan, carefully pour this sauce over them, letting it coat and simmer gently. Pour the sauce around the edges of the pan to prevent burning and allow it to reduce slightly. Adjust the heat as needed to prevent the sauce from burning.
Step 5
Once the sauce has thickened slightly and beautifully coated the duck belly rolls, your dish is ready!
