Curry Rice Ingredients- 1 packet curry powder or solid curry roux (choose your favorite brand)
- 1 onion (medium-sized)
- 1 carrot (medium-sized)
- 2 potatoes (medium-sized)
- 1 handful of cabbage (approx. 1/4 head)
- 100g pork or beef (curry cut or your preferred cut)
- 700ml water
- 1/4 stalk green onion, finely chopped
- A little cooking oil

Step 1
Curry, with its vibrant yellow turmeric, is not only good for immunity and health but also incredibly delicious! Its subtle aroma and clean taste are excellent for eliminating any unwanted odors in dishes and adding a beautiful color. I always keep curry powder on hand. Today, we’ll be making a ‘fridge clean-out’ curry rice bowl using up leftover vegetables.
Step 2
First, wash and peel the potatoes, onion, and carrot. Dice them into bite-sized pieces, about 1.5-2 cm cubes. Chop the cabbage into similar-sized pieces. Prepare all your vegetables.
Step 3
If you’re cooking for children, you might want to cut the vegetables smaller. If you prefer a more substantial bite, cut them larger. Heat a pan over medium heat, add cooking oil, and add the chopped green onions. Gently sauté the green onions until fragrant, releasing their aromatic oil. Sautéing them well is key.
Step 4
Once the green onions are fragrant, add the meat and stir-fry until it’s browned. Then, add the diced potatoes, carrot, onion, and cabbage to the pan. Stir-fry everything together until the vegetables are coated with oil. This step helps to bring out the natural sweetness of the vegetables.
Step 5
When the vegetables are about halfway cooked and slightly translucent, pour in the measured 700ml of water. Bring to a boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and simmer for about 10-15 minutes, or until the vegetables are tender.
Step 6
Once the vegetables are nearly cooked, add the curry powder or curry roux. Stir well with a spatula or ladle to dissolve the curry, ensuring it doesn’t stick to the bottom of the pot. Continue to simmer for another 3-5 minutes, stirring frequently. The curry will thicken and become glossy. You can adjust the amount of water to achieve your desired consistency.
Step 7
Ladle the hot, freshly cooked curry over a bowl of steamed rice. For a touch of color and extra fragrance, sprinkle with parsley flakes. You can also add decorative greens like shiso or baby greens for an elegant presentation.
