  • 200g pork tenderloin
  • 1/2 stalk of green onion

Seasoning Sauce
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp soy sauce
  • 2 Tbsp mirin (or cooking wine)
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp minced garlic
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s prepare the delicious seasoning sauce. In a bowl, combine 2 Tbsp gochugaru, 2 Tbsp soy sauce, 2 Tbsp mirin, 2 Tbsp oligosaccharide, 1 Tbsp gochujang, 1 Tbsp minced garlic, and a pinch of black pepper. Mix them well. A well-mixed sauce ensures an even flavor when stir-fried.

Step 2

Now, let’s prepare the main ingredients. Slice the green onion diagonally, and thinly shred the cabbage. It’s best to cut the cabbage into moderate thickness rather than very thinly, as it can become mushy when stir-fried.

Step 3

Heat about 1-2 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced green onion and stir-fry for about 2 minutes until fragrant, infusing the oil with scallion flavor. This step will significantly enhance the overall aroma of the dish.

Step 4

Next, add the pork tenderloin. Season it with a little salt and pepper, then stir-fry quickly over high heat for about 1 minute until the pink color disappears. Avoid overcooking the pork, as it can become tough; aim to cook it just until it’s no longer raw.

Step 5

Reduce the heat to medium. Add the shredded cabbage and the prepared seasoning sauce to the pan. Stir-fry everything together evenly for about 5 minutes, allowing the sauce to coat the cabbage and pork. The cabbage will soften slightly and release its natural sweetness.

Taste the mixture. If it needs more flavor, add 1 Tbsp of oyster sauce. Oyster sauce adds umami and helps balance the overall seasoning. Stir well after adding the oyster sauce and cook for another 1-2 minutes.

Just before turning off the heat, drizzle in 1 Tbsp of chili oil. The spicy aroma of the chili oil will make the dish even more flavorful. Stir it in gently with the residual heat after turning off the stove. If you cook it over high heat for too long after adding chili oil, its fragrance might dissipate.
