Nutritious Brown Rice and Red Bean Sticky Rice – Perfect for Lunar New Year!
This is a special kind of sticky rice, enhanced with the delightful texture of red beans and the wholesome chewiness of brown rice. It’s designed to be as comforting as your everyday rice but with an added layer of flavor and nutrition. A wonderful option for special occasions like the Lunar New Year’s Eve.
Ingredients- 1 cup Brown rice
- 1 cup Sweet/Glutinous rice
- 50g Red beans
- 2 pinches Salt
Cooking Instructions
Step 1
Start by thoroughly washing the red beans. Place the washed red beans in a pot, cover with plenty of water, and bring to a boil over high heat. While the beans are cooking, wash the glutinous rice, drain it in a sieve, and let it soak. It’s best to start soaking the glutinous rice around the time the red beans begin to boil.
Step 2
Once the red beans start boiling, continue to cook for about 1-2 minutes, then discard the cooking water. Carefully rinse the red beans 2-3 times, making sure not to mash them. Return the rinsed red beans to the pot and add a generous amount of fresh cold water, then bring it back to a boil.
Step 3
As the red beans begin to boil again, reduce the heat to medium-low. Let them simmer gently until they become tender and soft. It’s important to cook them slowly and steadily so the beans cook through without bursting.
Step 4
When the red beans are fully cooked and tender, drain them using a sieve. Discard the water they were cooked in. You can test for doneness by gently pressing a bean between your fingers.
Step 5
In your rice cooker pot, combine the soaked brown rice, soaked glutinous rice, and the cooked red beans. Add the two pinches of salt and mix everything together thoroughly with a spatula. Ensure the red beans are evenly distributed among the rice grains.
Step 6
Now it’s time to cook the rice. Add water as you normally would when cooking rice, but slightly less than usual since you’re using both brown and glutinous rice which can absorb water differently.
