Introducing the ‘Unwich’ recipe, a satisfying and healthy meal that you can enjoy without bread! An Unwich is a sandwich where fresh lettuce wraps the fillings instead of bread, and it’s especially popular among those following a low-carb, high-fat diet. You can also use perilla leaves or lettuce instead of iceberg lettuce according to your preference. This recipe offers two delicious variations: one with chicken breast and another with kabocha squash. The combination of fresh vegetables and abundant fillings will surely whet your appetite and provide a sense of fullness!
Filling Preparation- 1 head of iceberg lettuce
- 1 tomato
- 1 carrot
- 1 cucumber
- 2 eggs
- 1/2 kabocha squash
- 1 pack of chicken breast
Unwich Sauce- 2 Tbsp mayonnaise
- 2 Tbsp honey mustard
- 2 Tbsp mayonnaise
- 2 Tbsp honey mustard
Cooking Instructions
Step 1
First, hard-boil 2 eggs. Place the eggs in a pot and cover them with water. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 10-12 minutes until fully cooked. Rinse the boiled eggs under cold water, let them cool, and then peel them.
Step 2
Prepare and steam 1/2 kabocha squash. Place the kabocha squash in a steamer basket and steam over high heat for about 15-20 minutes until tender. It’s ready when a fork can easily pierce it. Once cooked, let it cool slightly, then peel off the skin and cut it into desired pieces.
Step 3
Wash the iceberg lettuce thoroughly under running water and ensure all moisture is removed. Leftover water can make the sandwich soggy, so it’s important to pat it dry with paper towels or use a salad spinner. Slice the cucumber diagonally about 0.5 cm thick, and julienne the carrot. Slice the tomato into rounds about 1 cm thick, excluding the very top and bottom ends (slicing as shown in the picture will make it look nice).
Step 4
Cut the chicken breast into bite-sized pieces. I used ‘I’m Dak’s whole black pepper flavored chicken breast’, but using a pre-cooked chicken breast product will make this recipe even easier. If you are using raw chicken breast, you can boil or pan-fry it first.
Step 5
Prepare the sauce for your Unwich. In a small bowl, combine 2 tablespoons of mayonnaise and 2 tablespoons of honey mustard, mixing well. If this sauce isn’t to your liking, you can substitute it with balsamic dressing or oriental dressing for a delicious alternative.
Step 6
Lay out a large piece of plastic wrap. Arrange the prepared lettuce leaves on top, overlapping slightly to create a wide base. Spread about 1 tablespoon of the prepared sauce evenly over the lettuce leaves. The sauce helps the ingredients adhere better and adds flavor.
Step 7
Neatly arrange the diagonally sliced cucumber on top of the sauced lettuce leaves. The crisp texture of the cucumber adds freshness to the sandwich.
Step 8
Mash or slice the hard-boiled eggs and layer them on top. Add the julienned carrots and sliced tomatoes, stacking them neatly. Place the chicken breast on top, and lightly brush with sauce again. If you want to make the kabocha squash Unwich, layer the steamed kabocha squash instead of the chicken breast. Avoid piling the ingredients too high, as it will make rolling difficult. Maintain a moderate height for easier handling.
Step 9
Finally, place another layer of lettuce leaves over the fillings, on top of the plastic wrap. Covering the entire filling with lettuce helps prevent the ingredients from falling out and gives the sandwich a nice shape.
Step 10
Using the plastic wrap, tightly roll up the Unwich. Pull the plastic wrap taut as you roll, ensuring the sandwich forms a neat shape and stays secured for eating. Make sure to wrap both ends securely.
Step 11
Cut the tightly wrapped Unwich in half with a knife to complete your delicious Unwich! Enjoy this healthy and flavorful Unwich, bursting with fresh vegetables and tasty fillings.
