Braised Tofu with Savory and Sweet Seasoning

Main Ingredients- 1 block Firm Tofu (approx. 300g)
- 1/4 stalk Green Onion (chopped, about 2 Tbsp)
- 1 Cheongyang pepper (chopped)
Braised Tofu Seasoning- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Sugar or Oligosaccharide
- 3 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1/2 Tbsp Maesil Cheong (Plum Extract)
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Toasted Sesame Seeds or Sesame Paste
- 2 Tbsp Water
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Sugar or Oligosaccharide
- 3 Tbsp Soy Sauce
- 1 Tbsp Oyster Sauce
- 1/2 Tbsp Maesil Cheong (Plum Extract)
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Toasted Sesame Seeds or Sesame Paste
- 2 Tbsp Water
Cooking Instructions
Step 1
Prepare one block of firm tofu. First, cut the tofu into 6 equal pieces for easy eating. It’s important to remove excess water from the cut tofu. Lay down several layers of paper towels, place the tofu on top, cover with another layer of paper towels, and gently press down to effectively remove moisture.
Step 2
Let’s make the key seasoning for delicious braised tofu! In a small bowl, combine 1 Tbsp gochugaru, 2 Tbsp sugar or oligosaccharide, 3 Tbsp soy sauce, 1 Tbsp oyster sauce, 1/2 Tbsp maesil cheong, 1 Tbsp sesame oil, 1 Tbsp minced garlic, 1/2 Tbsp toasted sesame seeds, and 2 Tbsp water. Mix well until evenly combined.
Step 3
Heat a frying pan with a generous amount of cooking oil. Place the drained tofu pieces in the pan and pan-fry until golden brown on both sides. Lightly searing the surface helps the tofu maintain its shape without breaking apart and improves the texture.
Step 4
Once one side of the tofu is golden brown, flip it over. When the second side also starts to turn golden brown, spoon about half of the prepared seasoning mixture over the tofu pieces, ensuring an even coating. This allows the seasoning to penetrate the tofu slightly.
Step 5
Gently flip the tofu again after adding the seasoning. Pour the remaining half of the seasoning mixture over the tofu. Now, heat control is crucial! Cook over medium-low heat, flipping the tofu back and forth, until the seasoning becomes glossy and the sauce thickens slightly. Watch as it bubbles and reduces, creating a mouthwatering glaze.
Step 6
Dividing the seasoning into two additions helps it coat both sides of the tofu evenly, making it look even more appetizing. Once the seasoning has thickened nicely, transfer the finished braised tofu to a serving plate. Enjoy it with a warm bowl of rice! ♡
