Braised Tofu Sauce

  • 1.5 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Toasted Sesame Seeds
  • 3 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
  • 6 Tbsp Water
  • 1 Tbsp Fish Sauce (Anchovy or other)
  • 1 Tbsp Sesame Oil
  • 2 Tbsp Oligodang (corn syrup) or Mulyeot (starch syrup)
  • 1/2 tsp Black Pepper

Cooking Instructions

First, prepare 1 block of tofu. Using firm tofu intended for pan-frying will help maintain its shape when cooked, making it even more delicious. Cut the tofu into bite-sized pieces, about 1.5 to 2 cm thick. Then, place the cut tofu on a colander to drain for about 10 minutes. This step helps prevent oil splattering when frying and allows the sauce to penetrate better.

Now, let’s prepare the scallions to add flavor to your braised tofu. Finely chop about 20cm of scallions or green onions. Having them chopped beforehand makes it convenient to add them directly to the sauce.

In a bowl, combine 1.5 Tbsp gochugaru, 1 Tbsp toasted sesame seeds, 3 Tbsp soy sauce, 6 Tbsp water, 1 Tbsp fish sauce (you can substitute with soy sauce if fish sauce isn’t available), 1 Tbsp sesame oil, 2 Tbsp oligodang (adjust sweetness to your preference), and 1/2 tsp black pepper. Mix everything thoroughly with a spoon to create the sauce.
