Hello everyone! I’m sharing a delicious braised pork ribs recipe perfect for the upcoming holidays. To tenderize the meat and enhance its flavor, I’ve used pear juice. If you don’t have pear juice, apple juice or half a mashed apple or pear can be used instead. This recipe yields 4-5 servings and is measured using a standard Korean soup spoon (T). You can also add ingredients like radishes, carrots, mushrooms, or chestnuts for a richer dish. Simply add these midway through the cooking process. Adjust the seasoning at the end to suit your taste!

Main Ingredients- 1500g pork ribs

Cooking Instructions
Step 1
First, we need to remove the blood from the pork ribs. For fresh ribs, soak them in cold water for about 30 minutes. If you’re short on time with fresh ribs, simply rinsing them thoroughly under cold water is acceptable. For frozen ribs, it’s best to extend the soaking time to ensure all blood is removed.
Step 2
Blanch the ribs that have had the blood removed in boiling water for 1-2 minutes. Adding about half a cup of soju during this step helps to eliminate any gamey odors. After blanching, rinse the ribs under cold water, making sure to clean each piece thoroughly. Drain the washed ribs well using a colander.
Step 3
Make cuts into the blanched ribs. It’s best to cut against the grain of the meat. If there are fatty parts, trim them off while making the cuts for a cleaner result. Place the scored ribs into the pot you’ll be using for braising.
Step 4
Cut the ½ onion into pieces that are easy to blend. Place the onion pieces and 1 packet of pear juice into a blender and puree until smooth. Pour this blended mixture evenly over the pork ribs in the pot. Add the chopped green onion (1 stalk), soy sauce (120ml), minced garlic (3 Tbsp), mirin (4 Tbsp), sugar (2 Tbsp), corn syrup (4½ Tbsp), and a pinch of black pepper. Mix everything well to coat the ribs. If time permits, you can refrigerate the marinated ribs for a few hours to let the flavors meld. (I didn’t have time, so I proceeded to braise them immediately.)
Step 5
Add 1000ml of water to the marinated ribs. Cover the pot with a lid, bring it to a boil over high heat, then reduce the heat to medium-low and let it braise for 1 hour. Stir the ribs occasionally with a spatula to ensure even cooking and flavor distribution. Towards the end of the braising time, add a drizzle of sesame oil for extra aroma. Taste the sauce and adjust the seasoning as needed; add more corn syrup if you prefer it sweeter, or a bit more soy sauce if it needs more salt. If after 1 hour the sauce is still too thin, remove the lid and increase the heat to high, allowing the sauce to reduce until it reaches your desired consistency.
