Boiling Ingredients

  • 1kg pork ribs
  • 1 onion
  • 2 sprigs of thyme
  • 10 whole peppercorns
  • A few whole cloves of garlic (about 5-6)
  • A piece of ginger (thumb-sized)
  • A pinch of red pepper flakes (optional, for a hint of heat)
  • 2 cups soju (Korean distilled spirit, about 200ml)

Sauce Ingredients

  • 5 Tbsp soy sauce (25ml)
  • 5 Tbsp oligosaccharide (25ml, adjust sweetness to taste)
  • 1 Tbsp oyster sauce (15ml)
  • 1 Tbsp minced garlic (15ml)
  • 2 Tbsp ketchup (30ml)
  • 1 Tbsp cooking wine (like mirin, 15ml)
  • 1/2 cup water (100ml)
  • A pinch of black pepper

Garnish

  • Parsley flakes

Cooking Instructions

Step 1

Begin by soaking the pork ribs in cold water for about 3 hours to remove any blood and impurities. Rinse and change the water every hour or so. Thoroughly draining the blood is crucial for eliminating any gamey odors and ensuring a clean, delicious flavor once cooked.

Step 1

Step 2

Once the ribs have been properly drained, place them in a large pot. Add the whole peppercorns and the piece of ginger to the pot. The ginger, when left whole and unpeeled (after washing thoroughly), imparts a wonderful aroma.

Step 2

Step 3

Add the thyme sprigs (if using, for extra aroma), the quartered onion, red pepper flakes for a subtle kick, and the whole cloves of garlic. Finally, pour in 2 cups of soju. The soju helps tenderize the meat and further reduces any gamey taste.

Step 3

Step 4

Pour enough cold water into the pot to completely submerge the pork ribs. Bring the water to a boil over high heat, keeping the lid slightly ajar to allow steam to escape.

Step 4

Step 5

Once the water reaches a rolling boil, reduce the heat to medium and let the ribs simmer gently for at least 1 hour, or until they are tender. Since we’re not using an oven, it’s vital to cook them thoroughly in this boiling stage. After simmering, carefully remove the ribs from the pot and give them a quick rinse under cold running water to cool them down slightly. Avoid rinsing for too long, as you might wash away some of the flavorful juices.

Step 5

Step 6

While the ribs are boiling, prepare the glaze. In a bowl, combine 5 Tbsp soy sauce, 5 Tbsp oligosaccharide, 1 Tbsp oyster sauce, 1 Tbsp minced garlic, 2 Tbsp ketchup, 1 Tbsp cooking wine, and 1/2 cup of water. Add a pinch of black pepper and whisk everything together until well combined. This creates a perfectly balanced sweet and savory sauce.

Step 6

Step 7

Now, heat a non-stick pan over medium-high heat without any oil. Place the boiled and drained ribs in the pan and sear them until they are nicely browned and slightly crispy on all sides. This step adds a lovely texture and enhances the overall flavor.

Step 7

Step 8

Once the ribs are beautifully browned, pour all the prepared sauce over them. Reduce the heat to low and let the sauce simmer and thicken, coating the ribs. Stir and turn the ribs frequently to ensure they are evenly coated with the glaze. As the ribs are already cooked, you only need to simmer them until the sauce has reduced and thickened to your liking. For convenience, you can prepare the sauce and boil the ribs ahead of time and store them in the refrigerator, ready to be glazed when you’re craving them.

Step 8

Step 9

Your delicious braised pork ribs are ready to be enjoyed! They make a fantastic side dish for rice or a wonderful appetizer. A sprinkle of parsley flakes adds a beautiful finishing touch. Dig in and savor this delightful meal!
