Delicious Braised Greenling Fish: A Husband-Approved, Rice-Stealing Recipe
Savory and Tender Braised Greenling Fish (Saechi)
This dish was made especially for my husband, who absolutely loves braised fish. The salty and sweet sauce makes it an irresistible side dish that disappears with rice in no time! It’s a magical flavor that will surely capture everyone’s taste buds. Try making this delicious fish stew that will delight your whole family.
Ingredients- 3 cleaned Greenling fish (Imyeonus), about 200-250g each
- 1 large Onion
- 1 tsp Ginger powder
- 2 Tbsp Cooking oil
- 1 Tbsp Gochugaru (Korean chili powder)
- 50g Scallions, chopped
- 2 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1 cup Water (200ml)
Cooking Instructions
Step 1
First, rinse the Greenling fish thoroughly under running water and remove any internal organs. Pat the fish dry with paper towels. Arrange the cleaned fish neatly in the bottom of a cooking pot. Handle the fish gently to prevent it from breaking.
Step 2
Pour 2 tablespoons of cooking oil into the bottom of the pot. Next, spread a generous layer of thinly sliced onion over the oil. The onion will help reduce any fishy odor and add natural sweetness to the dish. Place the prepared Greenling fish on top of the onions, and sprinkle 1 teaspoon of ginger powder evenly over the fish. Ginger powder is excellent for removing any unwanted fishy smells.
Step 3
Now, let’s prepare the delicious braising sauce. In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of minced garlic, and 1 tablespoon of gochugaru. Mix them well. You can adjust the seasoning ratios according to your personal preference. The secret to a clean and flavorful braised dish lies in this perfectly balanced sauce.
Step 4
Pour the prepared sauce evenly over the Greenling fish in the pot. Add the 50g of chopped scallions decoratively on top. Finally, carefully pour 1 cup of water around the edges of the pot. Pouring the water along the sides helps the sauce to adhere to the fish and soak in beautifully, rather than washing away.
Step 5
Turn the heat to high (simmer) and cover the pot. Let it boil vigorously for about 10 minutes. Starting with high heat allows the ingredients to cook through quickly. Once it begins to boil, reduce the heat to medium and continue braising.
Step 6
Reduce the heat to medium and continue to braise for about 15-20 minutes, or until the sauce has thickened and is just coating the fish. Basting the fish with the sauce from the pot using a spoon every so often will ensure the flavors penetrate evenly and make it even more delicious. Be mindful not to let the sauce reduce too much, and let it simmer gently until it reaches your desired consistency.
