Cooking Instructions
Step 1
First, prepare the main ingredient: burdock root. Choosing fresh burdock is the key to a delicious dish!
Step 2
Wash the burdock root thoroughly under running water to remove any dirt. You can gently scrape off the skin with the back of a knife for a cleaner finish.
Step 3
After peeling, rinse the burdock root again with cold water and drain it well.
Step 4
Now, julienne the burdock root into bite-sized pieces. Cutting it about 0.5 cm thick will give it a pleasant texture.
Step 5
Place the julienned burdock root in a deep pan or wok. Drizzle about 1-2 tablespoons of canola oil (or cooking oil) over it. This prevents the burdock from sticking and helps it fry nicely.
Step 6
Turn the heat to high and stir-fry for about 2 minutes until the burdock root softens slightly. This step helps to release its characteristic astringency.
Step 7
Add 1 tablespoon of sugar. Be careful not to let the burdock burn once the sugar is added.
Step 8
Reduce the heat to medium and stir-fry for about 3 minutes with the sugar. This process allows the burdock to absorb a subtle sweetness.
Step 9
Add 4 tablespoons of soy sauce and mix thoroughly. Soy sauce is the key ingredient for the color and umami of the burdock root.
Step 10
Lower the heat to low and stir-fry for about 1 minute, allowing the soy sauce to be absorbed by the burdock.
Step 11
Add 4 tablespoons of corn syrup (or oligosaccharide). Corn syrup adds a glossy finish and a smoother sweetness.
Step 12
Continue to stir-fry over low heat for about 1 minute. Stir well to prevent the sauce from burning.
Step 13
Now it’s time to simmer and let the flavors meld. Spread the burdock root evenly in the pan and simmer over very low heat for about 6-7 minutes. About 3 minutes into simmering, flip the burdock root once, spread it out again, and continue simmering for another 3-4 minutes. This ensures the sauce is evenly absorbed and makes it more delicious. (Tip: Covering the pan slightly while simmering can help retain moisture, resulting in a more tender dish!)
Step 14
Turn off the heat and add 1 tablespoon of sesame oil for an aromatic finish. The residual heat will enhance the sesame oil’s fragrance.
Step 15
Use a spatula or spoon to mix the braised burdock root evenly, coating it with sesame oil. Your delicious, glossy braised burdock root is ready!
Step 16
Transfer the finished braised burdock root into a container. Sprinkle a pinch of toasted sesame seeds on top for extra flavor and visual appeal. Enjoy your meal with this delightful side dish!
