Main Ingredients- 300g beef brisket
- 20 whole garlic cloves
- 2 Korean chili peppers (Cheongyang)
- 1 Tbsp sesame seeds
- 5 pieces dried kelp (about 5x5cm each)

- 1/2 cup sugar (approx. 100g)
- 3 cups water (approx. 600ml)

In a pot, combine 3 cups of water, 1/2 cup of soy sauce, 1/2 cup of sugar, and 5 pieces of dried kelp. Bring to a boil over medium heat. As soon as it starts boiling, use tongs to remove the kelp immediately to prevent a bitter taste. (Boiling kelp for too long can impart bitterness.)
Step 3
Rinse the beef brisket under cold water. Place the beef in boiling water and blanch for about 5 minutes until the surface is cooked. This step helps remove impurities for a cleaner-tasting jangjorim. Remove the blanched beef and slice it into bite-sized pieces. It’s best to slice against the grain for tenderness. Prepare the Korean chili peppers by removing the stems and finely chopping them.
Step 4
Add the prepared beef and 20 whole garlic cloves to the simmering soy sauce mixture. Reduce the heat to low, cover the pot, and let it braise for about 20 minutes, or until the liquid has reduced and the ingredients are well-coated with the sauce. It’s crucial to let it simmer until the sauce is nicely thickened.
