A Special Apple Curry Recipe Made with Plenty of Apples for Extra Sweetness and Aroma
This Apple Curry is exceptionally delicious with its sweet and deep flavor. The addition of ripe apples enhances the curry’s aroma, creating a special meal that the whole family can enjoy.
Curry Ingredients- 3 Apples (cored, peeled, and chopped)
- 4 Red Potatoes (washed, peeled, and diced)
- 1 Onion (chopped or thinly sliced)
- 1 handful Dried Shiitake Mushrooms (soaked in lukewarm water, stems removed, and sliced)
- 1.5 Red Bell Peppers (seeds removed and diced)
- 0.5 Yellow Bell Pepper (seeds removed and diced)
- 4 blocks Firm Curry Roux (your preferred brand)
- A little Cooking Oil (for sautéing onions)
Cooking Instructions
Step 1
First, thoroughly wash the apples, then peel them, remove the cores, and chop them into large pieces. (Tip: To ensure a smoother texture and avoid any grittiness from the apple peel, it’s recommended to peel the apples.)
Step 2
Heat a little cooking oil in a pan over medium-low heat. Add the chopped onion and sauté gently until it becomes translucent and releases its sweet aroma. It’s important to sauté the onions thoroughly for a rich flavor base.
Step 3
Once the onions are sufficiently sautéed, add the diced red potatoes and the rehydrated shiitake mushrooms. Sauté them together for a minute. Then, pour in enough water to cover the ingredients. Cover the pan with a lid and bring to a boil until the potatoes are tender.
Step 4
When the potatoes are almost cooked through, add the diced bell peppers and the prepared apples. Cook together until the bell peppers are tender-crisp and the apples are softened but not overly mushy. Avoid overcooking the apples.
Step 5
Once all the ingredients are cooked, reduce the heat to low and add the firm curry roux. Stir continuously to dissolve the curry completely, ensuring there are no lumps. If the curry seems too thick, gradually add a little hot water until you reach your desired consistency. (Tip: Always use hot water when adding liquid during cooking to prevent the curry from clumping or the temperature from dropping significantly.)
Step 6
Simmer the curry until it thickens and is well combined. The apple pieces will float to the top, creating an appealing look. Serve hot over steamed rice for a delightful meal!
