Main Ingredients- 1 Dried Pollack (Hwangtae)
- 100ml Water (for soaking)
- Cooking Oil, as needed (for grilling)
- Scallions, a small amount (for garnish)
Spicy & Sweet Marinade- 3 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Mirin or Rice Wine
- 1 Tbsp Plum Extract (Maesilcheong)
- 1 Tbsp Soy Sauce
- 0.5 Tbsp Sugar
- 0.5 Tbsp Sesame Oil
- 1 tsp Minced Garlic
- 1 tsp Minced Scallions
- 3 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Mirin or Rice Wine
- 1 Tbsp Plum Extract (Maesilcheong)
- 1 Tbsp Soy Sauce
- 0.5 Tbsp Sugar
- 0.5 Tbsp Sesame Oil
- 1 tsp Minced Garlic
- 1 tsp Minced Scallions
Cooking Instructions
Step 1
First, prepare the dried pollack. Place the Hwangtae in a bowl and pour 100ml of lukewarm water over it. Let it soak for at least 30 minutes, or until the pollack becomes soft and moist. Soaking ensures the pollack is tender and absorbs the marinade well.
Step 2
While the pollack is soaking, let’s make the delicious marinade. In a separate bowl, combine the gochujang, gochugaru, mirin, plum extract, soy sauce, sugar, sesame oil, minced garlic, and minced scallions. Mix them thoroughly with a spoon or whisk until smooth and lump-free. Making the marinade in advance allows the flavors to meld beautifully.
Step 3
Gently pat the soaked pollack dry with paper towels. To prevent it from curling or drying out during grilling, make 3-4 shallow cuts across the flesh. These slits will also help the marinade penetrate deeper, enhancing the flavor.
