Ingredients- 1 block firm tofu (large)
- 1 onion
- 1-2 Korean green chilies (optional)
- 1 Tbsp minced garlic (about 1 clove)
- 2 stalks green onions
- 2 Tbsp sugar
- 3 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp ponzu sauce or similar liquid seasoning (like ‘Yeondu’)
- 2 Tbsp fish sauce (anchovy or sand lance)
- 1 bouillon cube for stock (e.g., No Brand ‘Rich Stock Cube’)
- 500ml water
Cooking Instructions
Step 1
First, gather all your ingredients for the Dubu Duruchigi. You’ll need one large block of firm tofu, one onion, one to two Korean green chilies (if you like it spicy), one tablespoon of minced garlic (roughly one clove), two stalks of green onions. For the sauce, prepare two tablespoons of sugar, three tablespoons of gochujang, two tablespoons of gochugaru, two tablespoons of soy sauce, one tablespoon of ponzu sauce or a similar liquid seasoning, and two tablespoons of fish sauce. You’ll also need one bouillon cube for stock and 500ml of water.
Step 2
We’re using a bouillon cube for the stock, specifically a single-serving, individually wrapped cube like No Brand’s ‘Rich Stock Cube’. This cube is designed to add a deep umami flavor, making your Dubu Duruchigi taste incredibly rich and satisfying.
Step 3
Cut the large block of tofu in half. Then, slice it into large, bite-sized pieces. Aim for generous chunks, as smaller pieces can easily break apart during cooking. This size ensures the tofu holds its shape while absorbing the delicious sauce.
Step 4
Wash the green onions thoroughly. Slice the white parts in half lengthwise and then cut them into approximately 5cm (2-inch) lengths. You can finely chop the green parts to use as a garnish later, or add them during the cooking process.
Step 5
Now, let’s make the amazing sauce! In a bowl, combine three tablespoons of gochujang, two tablespoons of gochugaru, two tablespoons of soy sauce, two tablespoons of fish sauce, and two tablespoons of sugar. Add the one tablespoon of minced garlic and one tablespoon of ponzu sauce (or your liquid seasoning). Pour in about 200ml of the water and whisk everything together until you have a smooth, well-combined sauce.
Step 6
In a pot or deep pan, add 300ml of water and dissolve the bouillon cube completely. Once the stock is ready, carefully arrange the sliced tofu pieces on top of the liquid.
Step 7
Pour the prepared sauce evenly over the tofu. Arrange the sliced onion and Korean green chilies (if using) on top of the tofu and sauce. Cover the pot and bring it to a simmer over medium heat. Let it cook for about 10 minutes, allowing the tofu to start absorbing the flavors.
Step 8
Once the sauce begins to bubble, add the prepared green onions. Continue to simmer uncovered over medium heat for another 10 minutes, or until the sauce has thickened slightly and the green onions are tender. Adjust the heat as needed to prevent the sauce from drying out too much. Your delicious Dubu Duruchigi is ready!
