Main Ingredients- 2 sheets of fish cake (approx. 100g)
- 1/2 Korean mushroom (Saesongi mushroom)
- 1/4 onion
- 1/3 carrot
- 1 stalk green onion (mostly white part)
- 2-3 Tbsp cooking oil
- 1 bowl of warm rice (approx. 200g)
Seasoning- 1 Tbsp soy sauce
- Pinch of salt (to taste)

- Pinch of sesame seeds

Cooking Instructions
Step 1
First, briefly blanch the 2 sheets of fish cake in boiling water. This helps remove any impurities and results in a cleaner taste. Rinse the blanched fish cakes under cold water, squeeze out excess moisture, and finely mince them into small pieces (about 0.5cm) that are easy for children to eat. Finely mince 1/2 Korean mushroom, 1/4 onion, and 1/3 carrot into similar-sized pieces. You can substitute or add other vegetables your child enjoys, such as zucchini or bell peppers. Finely chop 1 stalk of green onion, focusing on the white part.
Step 2
Heat 2-3 tablespoons of cooking oil in a preheated pan over medium-low heat. Add the chopped green onions and stir-fry until they release a sweet and savory aroma, infusing the oil with flavor. This step is crucial for a rich taste. Once the green onion is fragrant, add the minced fish cake and stir-fry for about 1-2 minutes over medium heat.
Step 3
Lightly stir-fry the fish cake, then add all the prepared minced vegetables (Korean mushroom, onion, carrot) and stir-fry together. Cook for about 2-3 minutes until the vegetables become translucent and tender. Once the vegetables are partially cooked, add 1 bowl of warm rice. Use a spatula to break up the rice grains and stir-fry until the rice is well combined with the vegetables and fish cake. Make sure to break up any clumps of rice.
Step 4
When the rice and ingredients are well mixed, push the fried rice to one side of the pan. Pour 1 tablespoon of soy sauce into the empty space. Let the soy sauce simmer and slightly caramelize, then mix it into the fried rice. This adds a deep, umami flavor. Taste the fried rice and add a pinch of salt if needed for seasoning. Finally, turn off the heat, add 1 tablespoon of sesame oil and a pinch of sesame seeds, and mix well. Your delicious fish cake fried rice is complete!
