Main Ingredients

  • 3 sheets of Kimbap seaweed (nori)
  • 2 packs of thin Tofu noodles (approx. 300-400g)
  • 3 fresh eggs
  • 4 fresh perilla leaves (깻잎)
  • 1 medium carrot
  • 3 strips of pickled radish for Kimbap
  • 6 pieces of imitation crab sticks
  • 1 Tbsp seasoned soy sauce (Guk-ganjang or similar)
  • 1/2 Tbsp sesame oil
  • Pinch of salt
  • Vegetable oil for cooking

Cooking Instructions

Step 1

First, prepare the tofu noodles. Drain the tofu noodles in a colander and rinse them gently under running water. Then, pat them thoroughly dry with paper towels to remove excess moisture. In a bowl, combine the dried tofu noodles with 1/2 Tbsp sesame oil and a pinch of salt. Gently toss to coat and season. This step adds flavor and improves the texture of the tofu noodles.

Next, make a nutritious omelet. Crack 3 fresh eggs into a bowl and add a pinch of salt. Whisk well to combine. Heat a non-stick pan over medium-low heat, add a little vegetable oil, and pour in the whisked egg mixture. Cook until thick and set, creating a substantial omelet. Ensure it’s cooked through by cooking slowly over low heat. Once cooked, let it cool slightly, then cut it into strips similar in length and thickness to the pickled radish.

Now, stir-fry the carrot for a nice crunch. Peel the carrot and slice it into thin matchsticks. Lightly season the carrot matchsticks with salt. Heat a pan with a little vegetable oil and stir-fry the carrots until they are slightly tender but still retain a bit of crispness. This will add a refreshing texture to the kimbap.

Evenly spread the seasoned tofu noodles over the perilla leaves. Arrange the omelet strips, stir-fried crab sticks, pickled radish, and stir-fried carrots in a line on top of the tofu noodles. Using the bamboo mat, carefully and firmly roll the kimbap, ensuring all the fillings are tightly enclosed.
