I’ve discovered that homemade diet meals are far more effective than store-bought ones! While commercial diet lunches often exceed 300g, my homemade versions, even under 150g, provide similar satiety. Although I’m not great at calorie counting, I don’t believe my homemade meals are excessively high in calories. My weight loss results directly reflect the effectiveness of my home-prepared meals. Plus, I get to enjoy them exactly how I like them! This time, I’ve created a ‘Fish Curry Fried Rice’ that’s perfectly tailored to my taste buds, a recipe you won’t find anywhere else. As a fish lover, abstaining from fish during my diet was tough, but preparing it like this is incredibly delicious. Main Ingredients
- 2 bowls of mixed grain rice
- A little bit of mackerel fillet (or your preferred fish fillet)
- 1 leaf of cabbage
- 1 shiitake mushroom
- 4 chicken sausages (like Vienna sausages)
- A little bit of Korean green chili pepper
- A little bit of red Korean chili pepper
Seasoning
- 2 Tbsp olive oil
- 2 Tbsp curry powder
- 2 Tbsp olive oil
- 2 Tbsp curry powder
Cooking Instructions
Step 1
First, prepare the vegetables. Chop the cabbage into bite-sized pieces (about 2cm) and slice the shiitake mushroom similarly. Finely mince the Korean green chili pepper and red chili pepper after removing the seeds to add a spicy kick.
Step 2
Prepare the fish. If you’re using a whole fish, debone it, separate the flesh, and cut it into bite-sized pieces (about 2cm). If you have pre-filleted fish, you can use it as is.
Step 3
Heat a wok or a deep pan over medium heat. Add 2 Tbsp of olive oil. Once shimmering, add the minced garlic (optional, but it adds flavor) and sauté for about 30 seconds until fragrant.
Step 4
Now, add the sliced shiitake mushrooms and cabbage to the wok. Stir-fry for about 2-3 minutes until the vegetables soften slightly. The fragrant mushrooms and sweet cabbage will create a delicious base with the oil.
Step 5
Add the prepared fish fillet and chicken sausages (or Vienna sausages) to the wok and stir-fry together. Once the fish is cooked, add 2 Tbsp of curry powder. Mix well to ensure the curry powder coats all the ingredients evenly. Stir-fry while continuously mixing. Also, add the minced chili peppers at this stage for spiciness. Continue to cook until all ingredients are well-cooked and the curry aroma is fully released.
Step 6
Once the fried rice is ready, mix it well with 2 bowls of warm mixed grain rice, or serve the stir-fry over the rice. Portion it neatly into your lunch containers. You can optionally add a fried egg or some nuts on the side. Enjoy your meal and have a healthy day!
