  • 1 cup tomato sauce (approx. 200ml)
  • 2 tablespoons grated Parmesan cheese

Begin by trimming off both ends of the zucchini. Now, using a vegetable peeler (or a mandoline slicer on a very thin setting), peel long, thin strips from the zucchini lengthwise. Using a peeler makes it easy to get uniform, thin slices, even if you’re not comfortable with knife skills. Set the prepared zucchini slices aside.

Cut the fresh mozzarella cheese into bite-sized pieces, roughly the size that will fit comfortably within the width of your zucchini slices. This will make it easier to roll them up later.
