  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 0.5 Tbsp sugar
  • 1 Tbsp cooking wine (mirin or cheongju)
  • 2 Tbsp soy sauce

Cooking Instructions

First, let’s make the special seasoning sauce, the key to delicious fried rice. In a small bowl, combine 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 0.5 Tbsp sugar, 1 Tbsp cooking wine, and 2 Tbsp soy sauce. Mix well with a spoon, ensuring there are no lumps, to prepare the sauce. This sauce will add a rich umami flavor to your fried rice.

Rinse the fresh bean sprouts thoroughly under running water. Pour 2 cups of water into a pot and bring it to a boil over high heat. Once the water is boiling vigorously, add 1 Tbsp salt and the rinsed bean sprouts. Blanch the bean sprouts for just 1 minute. Be careful not to overcook them, as they can become mushy.

Immediately rinse the blanched bean sprouts under cold water to cool them down. This step helps maintain their crisp texture. After rinsing, drain the bean sprouts well in a colander. It’s crucial to remove as much water as possible, otherwise, your fried rice might turn out soggy.
