Main Ingredients- 2 handfuls fresh chives (approx. 100g)
- 2 cups pancake mix (approx. 200g)
- 2 cups cold water (approx. 400ml)
Dipping Sauce Ingredients- 2 Tbsp soy sauce
- 1 Tbsp plum extract (or syrup)
- A little chopped green onion
- A pinch of sesame seeds
- 2 finely chopped Korean chili peppers (cheongyang peppers)

Cooking Instructions
Step 1
First, thoroughly wash the fresh chives under running water to remove any dirt or debris. Shake off excess water and set aside.

Chop the cleaned chives into short pieces, about 1-2 cm in length. This helps prevent the chives from spilling out when you roll the jeonbyeong, ensuring a neat appearance.

In a large bowl, combine 2 cups of pancake mix and 2 cups of cold water. Whisk well until smooth, ensuring there are no lumps. (For a richer and softer texture, you can add 2 eggs and mix them in, but this is optional.)

Add the chopped chives to the batter and mix thoroughly using chopsticks or a spatula. Ensure the chives are evenly distributed throughout the batter for consistent flavor and texture.

And that’s it! With the chive batter ready, you’re all set to make delicious jeonbyeong.

Heat a lightly oiled pan over medium-low heat. Ensure the oil coats the entire surface of the pan.

Ladle about one dipperful of the chive batter onto the hot pan. Using the back of a spoon or a spatula, spread the batter thinly and evenly into a large circle. The thinner you spread it, the crispier and more delicious it will be.

Continue to cook over medium-low heat until the top surface of the jeonbyeong is almost cooked through. Flip it gently before the top is completely dry to prevent it from breaking. Aim for a soft, tender texture rather than a deep-fried crispiness; this is the key to a perfect jeonbyeong.

Once the jeonbyeong is partially cooked, carefully start rolling it from one end, much like making a rolled omelet (tamagoyaki).

Fold it over once from the opposite side, and continue to roll it up tightly.
