  • 1 pack Acorn Jelly (Dotori Muk, approx. 300-350g)
  • 1/2 cup Stock (water or anchovy-kelp stock, 100ml)
  • 2 Tbsp Soy Sauce (30ml)
  • 2 tsp Gochugaru (Korean chili flakes, 10ml)
  • 1 tsp Sugar (5ml)
  • A pinch of Sesame Seeds (for garnish)
  • A little Scallion, chopped (approx. 1 Tbsp)
  • 1 tsp Sesame Oil (5ml)

Hello everyone! Today, we’re going to make a delightful salad using acorn jelly, known for its delightful texture. This recipe is so simple yet incredibly delicious, making it a dish you’ll want to make often. Shall we get started?

First, we’ll prepare the flavorful dressing. In a bowl, add 2 tablespoons of soy sauce.

Next, add 1/2 cup (100ml) of stock (you can use plain water or anchovy-kelp stock), 2 teaspoons of gochugaru (Korean chili flakes), 1 teaspoon of sugar, about 1 tablespoon of chopped scallions, and 1 teaspoon of sesame oil. Mix everything well until combined. Pre-mixing the dressing like this makes assembling the dish a breeze! We’ll add the sesame seeds as a garnish at the end.

While you can use the acorn jelly as is, it’s a good idea to briefly blanch it in boiling water or soak it in hot water. This helps to remove any slight bitterness and makes the jelly even softer and more tender. You can either submerge the whole block in boiling water for about 30 seconds to 1 minute, or pour hot water over it and let it sit for 1-2 minutes. After blanching, rinse it under cold water and drain it well. This step significantly improves the texture and taste.

Cut the blanched acorn jelly into bite-sized pieces, about 1cm thick. If you cut it too thinly, it might break apart easily.
