Main Ingredients

  • 420g mung bean jelly (Cheongpomuk)
  • Pinch of coarse sea salt (for blanching)
  • 3-4 sheets of dried seaweed (Gim)
  • A handful of chives

Cooking Instructions

Step 1

First, cut the mung bean jelly into thin, bite-sized strips. In a pot, bring plenty of water to a boil with a pinch of coarse sea salt. Once boiling, carefully add the julienned mung bean jelly and stir gently with chopsticks for about 2-3 minutes until it turns transparent. Once transparent, immediately drain the jelly and rinse it thoroughly under cold running water to remove any excess starch. Drain well and let it sit in a sieve to remove any remaining moisture.

Step 1

Step 2

Lightly toast the dried seaweed sheets in a pan until crisp. Once toasted, crumble the seaweed into small pieces by hand or by wrapping it in a paper towel. Wash the chives thoroughly, pat them dry, and cut them into approximately 2-3 cm lengths.

Step 2

Step 3

To the drained mung bean jelly, add a pinch of salt, toasted sesame seeds, perilla seed powder, perilla oil, and sesame oil. Gently mix everything together with chopsticks or your hands until the seasonings are evenly distributed. Be careful not to mix too vigorously, as this can cause the jelly to break apart.

Step 3

Step 4

Add the crumbled toasted seaweed to the jelly mixture and gently toss to combine. This step infuses the jelly with the rich, nutty flavor of the seaweed.

Step 4

Step 5

Finally, add the chopped chives to the bowl and gently mix once more, ensuring all ingredients are well incorporated. The fresh aroma and crisp texture of the chives will add another delightful dimension to the dish. Transfer the finished seasoned mung bean jelly to a serving dish and enjoy!
