Galbitang Ingredients- 830g premium Korean beef short ribs
- 100g assorted Korean medicinal herbs (e.g., Hwanggi, Eomnamu, Jujubes)
- 10 seedless jujubes (dates)
- 1 fresh onion
- 30g wide glass noodles
- 2 stalks green onions (scallions)
- 2 Tbsp minced garlic
- 1/2 Tbsp salt (or soy sauce, adjust to taste)
Cooking Instructions
Step 1
The secret to a delicious Galbitang starts with removing blood from the ribs. Soak the Korean beef short ribs in plenty of cold water for about 1 hour. This step ensures the meat is cleaner and more tender.
Step 2
The wide glass noodles need time to soak, so prepare them about an hour before cooking. Submerge them in cold water so they become pliable and ready for the soup.
Step 3
Prepare the vegetables that will add a refreshing sweetness to the soup. Cut the green onions into large pieces, about 4-5 cm long. Halve the onion into quarters so it releases its flavor well during simmering.

Let’s make a beautiful garnish! Separate the egg yolks and whites. Pan-fry each into a thin omelet, then slice them into fine strips about 0.7 cm wide. The colorful garnish will make the soup even more appealing.

While the broth is simmering, rinse the blood-removed ribs under cold running water until they are clean. Then, blanch the ribs in boiling water for a minute to remove any remaining impurities.
