Cut the whole pork shoulder into large pieces, about 2.5-3cm (1 inch) thick, into 4 chunks. Larger pieces retain more juice during cooking, resulting in more tender and flavorful meat.

Prepare 850g (approx. 1.87 lbs) of well-fermented aged kimchi, which is the key to delicious kimchi jjim. Chop the kimchi into bite-sized pieces.

In a deep, spacious pot, layer the chopped aged kimchi and the pork shoulder pieces. As the pork cooks, its juices will meld with the kimchi, creating an even deeper flavor.

Pour in 1.3L (approx. 5.5 cups) of water, ensuring the ingredients are well covered. Using rice water instead of plain water will add a richer, smoother texture to the broth.
