Deep and Refreshing Fish Cake Soup (Eomuk Tang)

We’ve made a ‘deep and refreshing Eomuk Tang’ that is delicious on its own, by simmering it with various vegetables to bring out its rich flavor. ^^

Main Ingredients

  • 300g fish cakes
  • 2cm thick slice of Korean radish (mu)
  • 1/2 red chili pepper
  • Small amount of rice cakes (tteok)
  • 1/2 green chili pepper

Broth Ingredients

  • 10 cups water
  • 4cm thick slice of Korean radish (mu)
  • 1/2 large green onion
  • 1/2 onion
  • 20 anchovies (for broth)
  • 2 Korean green chili peppers
  • 1 handful dried shrimp
  • 2 shiitake mushrooms
  • 1 sheet dried kelp (dashima)

Seasoning

  • 2 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, to create a clear and deep broth, add 10 cups of water and all the broth ingredients (4cm radish, 1/2 green onion, 1/2 onion, 20 anchovies, 2 green chili peppers, 1 handful dried shrimp, 2 shiitake mushrooms, 1 sheet kelp) to a pot. Once it comes to a boil over high heat, remove the kelp immediately and reduce the heat to medium. Let it simmer for 30 minutes to extract the flavorful broth.

While the broth is simmering, prepare the ingredients for the Eomuk Tang. Cut the 300g of fish cakes into bite-sized pieces or desired shapes. Slice the 2cm radish thinly, and diagonally slice the red and green chili peppers. Prepare your rice cakes. (Optional: Adding hard-boiled eggs also makes it delicious.)

After 30 minutes, strain the broth using a sieve to remove all the solid ingredients (radish, green onion, onion, anchovies, dried shrimp, shiitake mushrooms, kelp). Add the prepared fish cakes, rice cakes, sliced radish, and chili peppers to the clear broth. Season with 2 Tbsp of soup soy sauce and 1 Tbsp of minced garlic. Continue to simmer over medium heat for another 3 minutes, allowing the flavors to meld.
