You can achieve a wonderfully fudgy brownie texture with your microwave, just like an oven! These are perfect for a quick treat. Makes approximately 2-3 servings. (Yields one 13x13cm brownie and two 8.5×5.5cm brownies).

Ingredients

  • 120g Dark Chocolate (finely chopped)
  • 60g Unsalted Butter (cubed)
  • 2 Large Eggs (room temperature)
  • 80g Granulated Sugar
  • 1 tsp Vanilla Extract (optional)
  • 70g Cake Flour (sifted)
  • 10g Unsweetened Cocoa Powder (sifted)
  • 2g Baking Powder (approx. 1/2 tsp)

For Garnish

  • Powdered Sugar, to taste

Cooking Instructions

In a heatproof bowl, combine the finely chopped dark chocolate and cubed unsalted butter. Gently melt them together over a double boiler (bain-marie) until smooth and lump-free. Stir continuously. Let the melted chocolate and butter mixture cool slightly.

In a separate bowl, crack the 2 large eggs and add the 80g of granulated sugar. Whisk them together thoroughly until well combined and the sugar has dissolved. You don’t need to whip them into a stiff foam.

Pour the slightly cooled chocolate-butter mixture from Step 1 into the egg mixture from Step 2. Add 1 tsp of vanilla extract. Using a spatula, gently fold everything together until just combined. Avoid overmixing. Ensure the chocolate and egg mixtures are fully incorporated.

Sift together the 70g of cake flour, 10g of cocoa powder, and 2g of baking powder into the bowl. Sifting helps prevent lumps and ensures the dry ingredients are evenly distributed, contributing to a tender brownie crumb.

Gently fold the sifted dry ingredients into the chocolate batter using a spatula. Mix only until no streaks of flour remain. Be careful not to overmix, as this can result in tough brownies. Stop mixing as soon as it’s just combined.

Grease your microwave-safe baking dish(es) (e.g., one 13x13cm or two 8.5×5.5cm dishes) thoroughly with melted butter or cooking oil. This step is crucial for easily unmolding the brownies after baking.

Pour the brownie batter into the prepared dish(es). The batter will rise during microwaving, so fill the dish only about 1/3 full to prevent overflow. If you fill it too high, it might spill over.

Place the dish(es) in the microwave and heat on high power (700W recommended) for a total of 3 minutes. Since microwave wattages vary, it’s best to heat in 1-minute intervals, checking the brownie each time. You’ll notice the batter puffing up.

Insert a toothpick into the center of the brownie. If it comes out clean with no wet batter attached, it’s done. If there’s still wet batter, microwave in additional 30-second bursts until done. Allow the brownie to cool completely in the dish on a wire rack. For an extra fudgy texture, chill the cooled brownie in the refrigerator for at least 1 hour before serving. Dust generously with powdered sugar just before serving for a beautiful finish!
