For Cooking the Pasta
  • 1 Tbsp coarse salt
  • Pasta (approx. for 2 servings, about the size of a 500-won coin)

Cooking Instructions

Step 1

Bring 1.8 liters of water to a rolling boil in a large pot over high heat. Add 1 tablespoon of coarse salt. Once the water is boiling vigorously, add the pasta.

Step 2

For two servings, measure out the pasta – about the size of a 500-won coin in diameter. Gently spread the pasta out in the boiling water to prevent sticking. Cook according to package directions, usually 1-2 minutes less than the stated time for al dente.

Step 3

While the pasta is cooking, take this time to prepare all your ingredients for the seafood cream pasta. This makes the cooking process much smoother.

Step 4

Finely dice half of a medium onion. The natural sweetness of the onion will enhance the cream sauce.

Step 5

Cut the 3 strips of bacon into bite-sized pieces, about 1 to 1.5 cm wide.

Step 6

Dice 1/5 of a zucchini into pieces similar in size to the bacon. Zucchini adds a pleasant tenderness to the creamy sauce. Now all your ingredients for the seafood cream pasta are prepped!

Step 7

Once the pasta is cooked to your liking (approximately 7-8 minutes), drain it thoroughly in a colander. Be careful not to overcook it, as it will become mushy.

Step 8

Spread the drained pasta on a large plate or transfer it directly to the pan you’ll be using. Drizzle with 2 tablespoons of olive oil and toss gently to coat. This prevents the pasta from sticking together.

Step 9

Heat a large pan over medium heat and melt the 30g of butter. Once the butter is melted, add the minced garlic and diced onion. Sauté until fragrant.

Step 10

Sprinkle a tiny pinch of salt over the vegetables as they sauté; this helps draw out moisture, aiding in a better caramelization. Continue to cook over medium heat until the onions become translucent and release their sweet aroma.

Step 11

Once the onions are softened and slightly caramelized, add the sliced bacon. Cook together, allowing the bacon fat to render and add its savory flavor to the mix.

Step 12

After the bacon has cooked for a short while, add the sliced button mushrooms and diced zucchini. Sprinkle a little black pepper at this stage to help remove any gaminess from the ingredients and enhance their flavor.

Step 13

It’s time for the seafood! Add the 5 pieces of squid and 12 shrimp. Sauté them just until they are cooked through. Avoid overcooking the seafood, as it can become tough.

Step 14

Pour in 50ml of white wine. Let it bubble and cook for about 1 minute, allowing the alcohol to evaporate. White wine helps to cut through any fishy odors and adds another layer of complexity to the sauce.

Step 15

If you desire a bit of heat, add 5 dried Vietnamese chili peppers. You can add them whole, or cut them in half for a spicier kick. Removing the seeds will result in a milder heat.

Step 16

Now, pour in the 200ml of heavy cream for a rich and velvety sauce. Reduce the heat to low. Once the sauce begins to simmer, maintain a low heat and allow it to thicken slightly.

Step 17

As the cream sauce begins to thicken, sprinkle in freshly ground black pepper. Pepper is like magic for cream sauces, amplifying the flavors! Stir well to ensure the sauce is evenly combined.

Step 18

Add the cooked pasta (2 servings) to the pan with the sauce. Toss everything together for 1-2 minutes, ensuring the pasta is well coated. If the sauce becomes too thick, gradually add a little of the reserved pasta water until you reach your desired consistency.

Step 19

Stir in 2 tablespoons of grated Parmesan cheese. For an extra layer of richness, add freshly grated Grana Padano or Reggiano cheese to your preference. Once the cheese is melted and incorporated into the sauce, turn off the heat immediately. Overcooking after adding cheese can alter its flavor.

Step 20

Plate the finished seafood cream pasta beautifully. Garnish with an extra sprinkle of grated cheese and some chopped parsley for a restaurant-worthy presentation. Your delicious homemade seafood cream pasta is ready to be enjoyed!
