  • 1 cup milk (200ml)

  • 1 cup blueberries (fresh or frozen)
  • 4 Tbsp raw sugar (or turbinado sugar)
  • Unsalted butter, for cooking

Cooking Instructions

Step 1

Prepare your ingredients for the star of the brunch: French toast. You’ll need 4 thick slices of bread; aim for a thickness of about 1.5 to 2 cm so they can soak up the custard without falling apart. Have 2 large eggs, 3 tablespoons of granulated sugar for sweetness, and 1 cup (200ml) of milk ready.

Step 2

In a shallow bowl or dish, whisk together the 2 eggs, 3 tablespoons of granulated sugar, and 1 cup of milk. This mixture forms the rich custard that will give your French toast its signature moist and delicious texture.

Step 3

Whisk the egg mixture thoroughly until well combined and smooth, ensuring no streaks of egg white remain. Then, gently dip each slice of bread into the custard, allowing it to soak for about 30 seconds to 1 minute per side. Don’t let it soak too long, or the bread might become too soggy and break.

Step 4

Heat a non-stick skillet or griddle over medium-low heat. Add about a tablespoon of unsalted butter and a tiny splash of cooking oil (like vegetable or canola oil) to prevent the butter from burning and to ensure even browning.

Step 5

Carefully place the custard-soaked bread slices onto the hot skillet. Make sure not to overcrowd the pan; cook in batches if necessary.

Step 6

While the first side is cooking, spoon some of the remaining custard mixture over the top of the bread slices already in the pan. This helps ensure the entire piece of bread is beautifully coated and cooks evenly.

Step 7

Cook for about 3-5 minutes per side, or until the French toast is golden brown and cooked through. Adjust the heat as needed to prevent burning. The goal is a beautiful, even golden-crisp exterior with a soft, custardy interior.

Step 8

While the French toast cooks, let’s make a simple blueberry jam. In a small saucepan, combine 1 cup of blueberries, 4 tablespoons of raw sugar, and 1/2 cup of water. Bring to a boil over medium-high heat, then reduce heat to medium and simmer for about 10 minutes, stirring occasionally. Gently mash some of the blueberries with your spoon as it cooks to achieve a jam-like consistency. Continue simmering until thickened to your liking.

Step 9

Serve the warm, golden French toast immediately. Top generously with the homemade blueberry jam and a slice of creamy cream cheese. The combination of sweet, tangy jam, rich cream cheese, and perfectly cooked French toast is simply irresistible!
