Returning from Switzerland, your daughter surprises Mom and sibling with a homemade spaghetti feast! Though usually a casual eater, today she’s pouring all her love into this dish, using abundant ingredients to create a delicious spaghetti. Try making this special spaghetti filled with a daughter’s affection!
Spaghetti & Vegetables- Egg Spaghetti, 3 servings
- 1 Onion
- 10 Button Mushrooms
- 200g Shrimp Meat
- 150g Bacon
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the spaghetti. Peel and wash the onion thoroughly under running water, then thinly slice it into strips. Clean the 10 button mushrooms; thinly slice 6 of them into 2-3mm thick pieces, and chop the remaining 4 into larger pieces, about 1cm in size. Slicing them differently adds a delightful texture variation.
Step 2
Peel, devein, and clean the 200g of fresh shrimp meat. Season the prepared shrimp with a little salt and pepper. This step enhances the shrimp’s natural sweetness and flavor.
Step 3
Heat 2-3 tablespoons of olive oil in a wide pan over medium heat. Add the thinly sliced onion and sauté until translucent, bringing out its natural sweetness. Once the onion begins to turn clear, add the bacon, cut into bite-sized pieces (about 2cm), and cook together. The rendered bacon fat will add a rich flavor.
Step 4
In a separate pot, bring plenty of water to a boil. Once boiling, add the 3 servings of egg spaghetti and cook for about 1 minute less than the package instructions for an al dente texture. Reserve about 1 cup of the pasta water before draining the pasta. Drain the cooked spaghetti well.
Step 5
In the pan with olive oil, add the larger chopped button mushrooms and the seasoned shrimp meat. Sauté until the mushrooms are golden brown and the shrimp turns pink. Finally, add 1 knob of butter (about 10g) to melt and infuse the dish with its rich aroma.
Step 6
Pour 2 cups of milk and 1 cup of water into the pan with the sautéed ingredients to create the sauce. Bring to a simmer over medium-low heat. Once the sauce begins to bubble, add the drained egg spaghetti. Season with 2 tablespoons of anchovy sauce for a deep umami flavor that’s different from regular salt. Stir and cook for another 1-2 minutes, allowing the pasta to absorb the sauce.
Step 7
As the spaghetti sauce thickens and coats the pasta, tear 4 slices of cheese and add them to the pan. Stir gently until the cheese is melted, creating a creamy and rich texture. Continue to simmer until the cheese is fully incorporated.
Step 8
Before turning off the heat, adjust the seasoning with salt to your preference. Finish with a pinch of pepper for a fragrant touch.
Step 9
Transfer the finished spaghetti to warm plates. Your daughter’s special spaghetti, made with love and care, is now ready to be enjoyed!
