Main Ingredients- Leftover cooked rice: 2/3 cup
- Onion: 1/4, finely chopped
- Carrot: a small amount, finely chopped
- Chives or Green Onions: a small amount, finely chopped
- Mushrooms: a small amount, finely chopped
- Tuna (canned): 2 Tbsp, drained
- Shrimp (minced): 2 Tbsp (optional)
- Eggs: 2

Cooking Instructions
Step 1
First, prepare all the ingredients for your Curried Rice Patties. You should have about 2/3 cup of leftover rice. Wash and finely chop all the vegetables like onion, carrot, chives, and mushrooms. Feel free to use any assorted vegetables you have in your refrigerator for added flavor and texture.

Step 2
In a large bowl, combine the cooked rice, the finely chopped vegetables, drained tuna, and minced shrimp (if using). Mix everything thoroughly until well combined. This is a great opportunity to get creative and use up whatever ingredients you have available!
