  • 1 stalk green onion (white part mainly)
  • 1-2 Tbsp curry powder (adjust to taste)

Soak the julienned potatoes in cold water for about 5 minutes to remove excess starch. This step prevents the potatoes from sticking together when stir-frying, resulting in a cleaner texture.

Instead of stir-frying the potatoes immediately after rinsing, we’ll briefly pre-cook them in the microwave. Place the potato strips in a microwave-safe bowl, add just 1-2 tablespoons of water, and microwave for about 3 minutes. This method ensures the potatoes cook evenly in a short time, eliminating worries about them burning or being undercooked in the pan, thus shortening the overall cooking time.

Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté them slowly until fragrant. This process infuses the oil with the sweet aroma of the onions, creating ‘scallion oil’ which adds an extra layer of deliciousness to the dish.

Finally, sprinkle with toasted sesame seeds and mix lightly to complete this delicious curried potato stir-fry!
