Create an Indian-Inspired Curried Onion Stir-fry Brunch at Home
A slightly modified recipe inspired by Chef Baek Jong-won’s YouTube channel, designed for one serving. This recipe makes a delicious and easy brunch.
Main Ingredients- 1/2 medium onion, thinly sliced or diced
- 1 medium tomato, diced
- 1 large egg
- A pinch of minced garlic
- Bread, as desired, for serving
Special Curry Sauce- 1.5 Tbsp curry powder
- 1 Tbsp red pepper flakes (gochugaru)
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp cooking oil

Cooking Instructions
Step 1
First, let’s prepare the flavorful curry sauce. In a small bowl, combine 1.5 tablespoons of curry powder, 1 tablespoon of red pepper flakes, and a pinch each of salt and black pepper. Mix them thoroughly until well combined and smooth, ensuring there are no lumps.
Step 2
Now, it’s time to prepare the vegetables. Thinly slice or dice the half onion. Dice the tomato into bite-sized pieces. The size of your cuts can be adjusted to your preference, but dicing them relatively small will help the flavors meld beautifully when stir-fried.
Step 3
To make the cooking process smoother, it’s best to pre-whisk the egg. Crack 1 large egg into a mixing bowl and gently beat it with a fork or whisk until the yolk and white are fully combined and smooth. This step ensures the egg incorporates evenly into the dish later.
Step 4
Let’s start stir-frying! Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Be careful not to burn the garlic; you want to release its aromatic oils.

Once the garlic is fragrant, add the sliced onions to the pan. Stir-fry until the onions become translucent and slightly softened, about 2-3 minutes. Then, pour in the prepared curry sauce and stir-fry with the onions, allowing the sauce to coat them evenly for another 1-2 minutes.

As the aroma of curry begins to intensify, add the diced tomatoes to the pan. Continue to stir-fry everything together until the tomatoes soften slightly and release some of their juices, about 2-3 minutes. The tomatoes will add a touch of acidity and sweetness.

We’re almost done! Finally, pour the pre-whisked egg over the mixture in the pan. Gently stir and scramble the egg with the other ingredients until it’s just cooked through. Avoid overcooking to maintain a tender texture.
Step 8
Transfer the delicious curried onion stir-fry to a serving plate. This dish is wonderful served with freshly baked bread, warm Indian naan, or soft tortillas for a satisfying and flavorful brunch.
