Seasoning

  • 4 Tbsp Vinegar
  • 1/2 Tbsp Salt
  • 2 Tbsp Sugar
  • 1/2 Tbsp Minced garlic

For Washing Cucumbers

  • 2 Pinches of coarse salt

Cooking Instructions

Step 1

First, prepare the red chili pepper. Wash it thoroughly, then slice it thinly on the diagonal to add a beautiful color. Avoid slicing it too thickly.

Step 1

Step 2

Since we’ll be eating the cucumber with its skin on, gently rub the surface with coarse salt under running water. This helps to clean the cucumber skin thoroughly and maintain its crisp texture.

Step 2

Step 3

Using a peeler, lightly scrape off the bumpy ridges on the cucumber’s skin. Be careful not to peel too deeply; aim to create a smoother surface.

Step 3

Step 4

Trim off the stem and blossom ends of the cucumbers. This is a basic preparation step for making delicious Cucumber “Tang Tang-i”.

Step 4

Step 5

Place the prepared cucumbers into a clean plastic bag or a zipper bag. Then, using a rolling pin, a mallet, or a similar firm stick, gently pound the cucumbers. It’s important to control your force so the cucumbers don’t completely mash; pound them until they break into manageable pieces. This is the secret to achieving a crisp texture!

Step 5

Step 6

Transfer the pounded cucumbers into a large mixing bowl. As you pound them, larger chunks might form. Break these larger pieces further with your hands into bite-sized pieces. Be careful not to crush them too finely, as this can make them mushy.

Step 6

Step 7

Now it’s time to add the seasoning ingredients. Add the pre-measured minced garlic (1/2 Tbsp), salt (1/2 Tbsp), sugar (2 Tbsp), and vinegar (4 Tbsp) for that tangy flavor, all over the cucumbers. You can adjust the seasoning ratios to your preference.

Step 7

Step 8

Add the thinly sliced red chili pepper that you prepared earlier. The vibrant color of the chili will make your Cucumber “Tang Tang-i” look even more appetizing.

Step 8

Step 9

Gently mix everything together to combine the ingredients. Stir carefully so the seasoning coats the cucumbers evenly. Then, transfer the mixture to a nice serving dish. Your delicious Cucumber “Tang Tang-i” side dish is now complete!

Step 9

Step 10

Your sweet and sour, crisp Cucumber “Tang Tang-i” is ready! It’s wonderful served with warm rice or as a refreshing accompaniment to other dishes. It’s simple but incredibly delicious – be sure to give it a try!
