Main Ingredients- 300g fresh bean sprouts
- 1 bunch chives, trimmed
- 1/3 carrot, julienned
Seasoning Ingredients- 1 Tbsp salted fermented shrimp (minced)
- 0.5 Tbsp fine salt
- 0.5 Tbsp soy sauce (Korean soup soy sauce or regular soy sauce)
- 1 Tbsp rice wine (mirin or cheongju)
- 1 Tbsp minced garlic
- 1/4 Tbsp black pepper
- 1 Tbsp salted fermented shrimp (minced)
- 0.5 Tbsp fine salt
- 0.5 Tbsp soy sauce (Korean soup soy sauce or regular soy sauce)
- 1 Tbsp rice wine (mirin or cheongju)
- 1 Tbsp minced garlic
- 1/4 Tbsp black pepper
Cooking Instructions
Step 1
First, rinse the bean sprouts thoroughly under running water to remove any dirt or debris. Be gentle to avoid breaking the sprouts. Drain the rinsed bean sprouts in a colander.
Step 2
Bring a generous amount of water to a rolling boil in a pot. Once boiling, add the cleaned bean sprouts. Cover the pot and blanch for about 4-5 minutes, ensuring they remain crisp. Be careful not to overcook them, as they can become mushy.
Step 3
Immediately drain the blanched bean sprouts using a colander to discard the hot water. Then, quickly rinse them under cold water to cool them down. This step helps maintain their crunchy texture. Gently squeeze out excess water with your hands.
Step 4
Prepare the vegetables: wash and cut the chives into 3-4 cm lengths. Julienne the carrot thinly. Having the vegetables prepped will speed up the next steps.
Step 5
In a small bowl, combine all the seasoning ingredients: minced salted fermented shrimp, salt, soy sauce, rice wine, minced garlic, and black pepper. Mix well to create the seasoning paste. Mincing the salted fermented shrimp adds more umami, and you can adjust the amount of soy sauce to your preference.
Step 6
In a large bowl, combine the drained bean sprouts, prepared chives, and julienned carrots. Pour the seasoning paste over the vegetables. Gently toss everything together until the seasoning is evenly distributed. Avoid tossing too vigorously to prevent the bean sprouts from breaking.
Step 7
Finally, add the sesame oil and toasted sesame seeds. Toss gently once more to incorporate them. The sesame oil and seeds add a wonderful aroma and flavor.
Step 8
Transfer the finished seasoned bean sprouts to a serving plate or container. Your delicious and refreshing side dish, perfect for bibimbap or as a standalone banchan, is ready to be enjoyed! Create a healthy and delightful meal.
