Main Ingredients
  • Well-fermented Radish Kimchi: As much as you like (equal to or more than the rice)
  • Warm Cooked Rice: 2 bowls
  • Scallions: 1 handful (finely chopped)
  • Minced Garlic: 2 blocks (approx. 1 Tbsp)
  • Sesame Oil: To taste (for a nutty aroma)
  • Crushed Seaweed (Gim): As needed (for garnish)

Cooking Instructions

Step 1

Heat a generous amount of cooking oil in a frying pan over medium-low heat. Add the chopped scallions and sauté until fragrant and their flavor has infused the oil. Be careful not to burn them. This step creates a delicious scallion-infused oil.

Step 2

Once the scallions are fragrant, add the minced garlic and stir-fry until the aroma of garlic is released. Continue to stir and cook, ensuring the garlic doesn’t burn. Adjust the heat as needed.

Step 3

Chop the radish kimchi into bite-sized pieces (about 1-2 cm) using scissors and add it to the pan. Stir-fry the kimchi for a bit. Then, add 2 tablespoons of water and simmer until most of the liquid has evaporated and the kimchi looks glossy. This process mellows the kimchi’s sourness and deepens its savory flavor.

Step 4

Once the kimchi has reduced, add the warm cooked rice to the pan. Gently break up the rice with a spatula, ensuring not to mash the grains, and stir-fry thoroughly with the kimchi until well combined. Continue to stir-fry until the rice grains are distinct and slightly toasted for the best texture.

Step 5

Drizzle in sesame oil to finish. Stir everything together one last time to distribute the nutty aroma throughout the fried rice. The sesame oil adds a wonderful depth of flavor.

Step 6

Generously sprinkle the crushed seaweed (gim) over the fried rice. The seaweed adds another layer of savory umami, making the dish even more delicious.

Step 7

Transfer the well-cooked Radish Kimchi Fried Rice to a serving bowl. Enjoy immediately while it’s warm for the best taste and texture!
