Essential Ingredients- 1 carrot (medium-sized)
- 1 tsp salt
- 1 Tbsp vinegar
- 1 Tbsp sugar

First, prepare one fresh carrot. Wash it thoroughly, peel it, and then julienne it into thin, fine strips. Using a mandoline slicer or a grater will make it easier and more uniform. (I used a mandoline slicer from Daiso, and it was really convenient!)

Place all the julienned carrots into a bowl. It’s important to maintain the carrot’s crispness, so avoid slicing them too thickly.

Add 1 tsp of salt to the julienned carrots and mix well. Let it sit for about 3-5 minutes to allow the carrots to release their moisture. This process helps remove any bitterness and softens the carrots slightly.

After the time has passed, squeeze out the excess moisture from the carrots with your hands. Removing the water this way prevents the salad from becoming watery and helps the seasoning adhere better.

To the drained carrots, add 1 Tbsp of sugar and 1 Tbsp of vinegar. Mix everything together thoroughly until well combined. Feel free to adjust the amount of sugar or vinegar to achieve your desired balance of sweet and sour flavors.
