Crunchy and Spicy Stir-Fried Garlic Scapes with Gochujang
My All-Time Favorite Side Dish: Gochujang-Marinated Garlic Scapes!
I bought a bunch of garlic scapes and made two kinds of side dishes! Today, I’m sharing one of them: a deliciously spicy and slightly sweet garlic scape salad seasoned with gochujang. This simple recipe is perfect for adding a burst of flavor to your everyday meals or even for special occasions.
Main Ingredients- Garlic scapes 1/2 bunch
Seasoning Ingredients- Gochujang (Korean chili paste) 2 Tbsp
- Minced garlic 1 tsp
- Cooking syrup (or corn syrup) 3 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp

Cooking Instructions
Step 1
First, trim off the tough ends of the garlic scapes. Then, cut them into bite-sized pieces, about the thickness of your pinky finger. If the scapes are particularly thick, you can slice them in half lengthwise.
Step 2
Bring a generous amount of water to a boil in a wok or pot, adding 1 tablespoon of coarse salt. Once boiling, add the prepared garlic scapes and blanch them for about 3 minutes. The blanching time might vary depending on the thickness of the scapes. For thicker ones, 3 minutes is good, while thinner scapes might only need 1-2 minutes. This brief blanching helps retain their crisp texture.
Step 3
After blanching, immediately rinse the garlic scapes under cold running water to cool them down. This step helps to lock in their vibrant green color and maintain their satisfying crunch.
Step 4
Drain the rinsed garlic scapes thoroughly in a colander. It’s important to remove as much excess water as possible, as any remaining moisture can dilute the seasoning.
Step 5
Place half of the drained garlic scapes into a mixing bowl. (The other half was used to make a different side dish.)
Step 6
Add 1 teaspoon of minced garlic and 2 tablespoons of gochujang to the garlic scapes.
Step 7
Next, add 3 tablespoons of cooking syrup (or corn syrup/oligo당) for a touch of sweetness.
Step 8
Finally, drizzle in 1 tablespoon of sesame oil for nutty aroma and sprinkle in 1 tablespoon of toasted sesame seeds for added flavor and texture.
Step 9
Gently mix everything together with your hands until the garlic scapes are well coated with the spicy and sweet sauce. Your delicious Gochujang-Marinated Garlic Scapes are ready! This delightful side dish, with its perfect balance of crunch and flavor, is sure to make your rice disappear quickly.
