Ingredients- 260g young garlic
- 4 Tbsp gochujang (Korean chili paste)
- 2 Tbsp corn syrup (or oligosaccharide)
- 1.5 Tbsp gochugaru (Korean chili flakes)
- 2.5 Tbsp sesame seeds (ground)
- 1.5 Tbsp sesame oil
Cooking Instructions
Step 1
Young garlic bought from the market is usually trimmed, but to be safe, carefully wash the inside of the stems and between the leaves to remove any residual dirt. Thoroughly cleaning is key to ensure no soil or debris remains.
Step 2
Drain the washed young garlic well on a colander. To help the seasoning penetrate deeply, make a cut about 5cm long into the white stem part of the garlic, as if splitting it in half. This allows the sauce to seep into the core, making it more flavorful. Remove and discard any wilted or damaged leaves.
Step 3
Cut the prepared young garlic into bite-sized pieces, about 5cm in length. Cutting them to a manageable size will make them easier to eat.
Step 4
In a bowl, combine the gochujang, gochugaru, and corn syrup (or oligosaccharide) for sweetness. Mix these seasoning ingredients well.
Step 5
Add the cut young garlic to the prepared seasoning mixture. Gently toss to coat the garlic evenly without breaking it, ensuring the crisp texture is preserved.
Step 6
Finally, add the sesame oil and ground sesame seeds for a nutty aroma and mix lightly. Your delicious young garlic kimchi is now ready!
Step 7
You can enjoy this kimchi immediately for a fresh taste. However, for a deeper flavor, refrigerate it overnight. This allows the seasoning to fully meld with the young garlic, resulting in an even more delicious side dish. Enjoy this spring delicacy with your meals!
