Main Ingredients- 100g Winter Greens
- 1/2 Apple (about 3 slices)
- A little Green Onion
Seasoning Ingredients- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Plum Extract
- 1 Tbsp Minced Garlic
- 1 tsp Vinegar
- 1 tsp Sugar
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Fish Sauce (or Anchovy Sauce)
- 1 Tbsp Plum Extract
- 1 Tbsp Minced Garlic
- 1 tsp Vinegar
- 1 tsp Sugar
- 1 Tbsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
First, peel the apple, remove the core, and slice it thinly into matchsticks. Wash the green onions and cut them into 3cm lengths.
Step 2
In a large bowl, place the thoroughly washed and drained winter greens. Add all the prepared seasoning ingredients (gochugaru, fish sauce, plum extract, minced garlic, vinegar, sugar, toasted sesame seeds, and sesame oil). Gently mix everything together, ensuring the seasoning evenly coats the greens. Be careful not to mix too vigorously, as this can make the greens taste a bit raw.
Step 3
To the seasoned winter greens, add the julienned apple and chopped green onions. Toss gently to combine without breaking the ingredients. This simple yet refreshing winter greens and apple salad is now complete!
Step 4
Adding crisp apples to the winter greens salad significantly enhances the texture, making it even more delicious. That’s why I always include plenty of apples when making this dish. The apple’s tartness balances the slightly bitter taste of the winter greens, creating a more appealing flavor.
Step 5
While delicious immediately after mixing, allowing the salad to sit for about 5-10 minutes lets the flavors meld beautifully. For an extra crisp texture, much like a lettuce salad, you can prepare the dressing separately and toss everything just before serving.
Step 6
I first tried this winter greens salad in the Gyeongnam region, and it was truly a special dish. The crisp texture and the burst of freshness lingered in my memory. I felt grateful that such a delicious dish could be made with fresh vegetables from the garden.
Step 7
This winter greens salad is not only a great side dish but also a delightful treat. If you mix it with rice, a dollop of gochujang (Korean chili paste), and sesame oil in a bowl, it’s so delicious that a single bowl of rice won’t be enough! It makes for a satisfying meal.
Step 8
The winter greens we often refer to are sometimes called ‘Dongcho’ or ‘Gyeoulcho’ depending on the region. ‘Dongcho’ signifies its resilient life force that endures through winter, and it’s also sometimes referred to as ‘Yu Chae’ (rapeseed). These winter greens are a precious vegetable that offers fresh flavor and nutrients even during the coldest season.
