Enjoy a refreshing white bean sprout salad with a satisfyingly crisp texture. This recipe omits minced garlic, allowing the natural flavor of the bean sprouts to shine, and uses tuna extract for a deep umami taste. Made with simple ingredients, it’s an easy dish perfect for any meal. Steaming the sprouts results in a cleaner and healthier side dish.
Main Ingredients- 300g bean sprouts
- 150ml water (for steaming)
- 1 stalk green onion, about 5cm (white part preferred, or substitute with scallions)
Seasoning- 1 Tbsp sesame oil
- 1 Tbsp tuna extract
- 0.5 Tbsp salt (adjust to taste)
- A pinch of sesame seeds

Cooking Instructions
Step 1
Thinly slice the green onion. This will be added raw at the end with sesame seeds, so slice it as finely as possible for a better texture when mixed with the bean sprouts. If using scallions, also slice them thinly.
Step 2
Rinse the bean sprouts thoroughly under running water. Remove any damaged sprouts or roots, and rinse about 2-3 times. Drain well. Be careful not to rub the bean sprouts too vigorously while washing.
Step 3
Place the washed bean sprouts in a wok or pot and add 150ml of water. It’s crucial not to add too much water, as we are steaming rather than boiling the sprouts. Make sure to cover the pot tightly while steaming to prevent any fishy odor; do not lift the lid during this process.
Step 4
Cover the pot and steam the bean sprouts over medium-high heat for about 3 minutes and 30 seconds to 4 minutes. Using thicker, specially designated steaming bean sprouts can yield an even crisper result. Be mindful of the steaming time to avoid overcooking the sprouts.
Step 5
Discard the water that has accumulated after steaming the bean sprouts. Let the sprouts cool down slightly before seasoning. They don’t need to be completely cold, just enough for the steam to dissipate a bit.
Step 6
Once the bean sprouts have cooled slightly, add 1 Tbsp of sesame oil first and toss gently. Adding sesame oil at this stage helps to enhance the nutty aroma of the bean sprouts.
Step 7
Next, add 1 Tbsp of tuna extract and 0.5 Tbsp of salt. Mix well to distribute the seasoning evenly and adjust the taste. The base seasoning comes from tuna extract and salt, but taste and add more salt if needed to suit your preference. It’s best to aim for a balanced, not overly salty flavor.
Step 8
Finally, add the thinly sliced green onion and a pinch of sesame seeds. Toss everything together gently until well combined. A delicious white bean sprout salad, ready to be served, is now complete.
