I made stir-fried anchovies with walnuts! I ensured the walnuts stayed crispy without becoming soggy. This walnut and anchovy stir-fry, when cooked to a crisp, feels more like a sophisticated bar snack than a simple side dish. It’s a guaranteed hit with both adults and children.
Main Ingredients- 1 cup walnuts
- 2 cups dried anchovies for stir-frying
Cooking Instructions
Step 1
To achieve a crispy texture, we’ll start by preparing the walnuts. Place 1 cup of walnuts in a pot and add enough water to fully submerge them. Bring this to a boil over high heat.
Step 2
Once the water is rapidly boiling, turn off the heat. Drain the walnuts in a sieve and press out as much water as possible. Rinsing them under cold running water can help remove excess moisture effectively.
Step 3
Now it’s time to toast the drained walnuts to make them crispy. Heat a clean, dry pan over medium heat. Add the walnuts without any oil.
Step 4
Stir-fry the walnuts over low heat until they become lightly golden and have a crunchy texture. This process enhances their nutty flavor and prevents them from becoming soggy. Set the toasted walnuts aside in a separate bowl.
Step 5
Next, we’ll toast the dried anchovies. Make sure the pan is clean and heated again. Add 2 cups of dried anchovies for stir-frying to the dry pan.

Stir-fry the anchovies over low heat until any fishy smell dissipates and they become crispy. After toasting, you can gently shake them in a sieve to remove any small fragments for a cleaner finish. Set the toasted anchovies aside.
Step 7
Let’s make the seasoning sauce. In the pan, combine 1 Tbsp soy sauce, 1 Tbsp cooking wine (cheongju), 1 Tbsp sugar, 1 Tbsp corn syrup (oligo당), a pinch of black pepper, and 1/2 cup of water. Stir well and bring the mixture to a boil. Once boiling, reduce the heat slightly and let it simmer for a moment.
Step 8
When the seasoning sauce is simmering, add both the prepared crispy walnuts and anchovies to the pan.

Now, we’ll stir-fry everything together until the sauce evenly coats the ingredients. It’s important to stir-fry quickly over medium-low heat with a spatula to prevent burning. Holding both handles of the pan and shaking it gently can help distribute the heat evenly.
Step 10
Once the sauce has reduced and coats the ingredients with a glossy sheen, add 1 Tbsp of sesame oil and stir-fry briefly one last time to infuse the aroma.
Step 11
Finally, sprinkle 1 Tbsp of toasted sesame seeds over the top. The addition of fragrant sesame seeds will make it even more appealing. Serve this delicious walnut and anchovy stir-fry with your favorite meal!
