Main Ingredients- 200g Beef for Grilling (e.g., thinly sliced sirloin or ribeye)
- 1/4 carrot, julienned
- 1/2 onion, thinly sliced
- 1/2 pack enoki mushrooms, trimmed and roughly chopped
- 2 cloves garlic, thinly sliced
- 1.5 Tbsp potato starch
Beef Marinade- 2 Tbsp ‘Mihyang’ (or cooking wine/mirin)
- 1 Tbsp sugar
- 1 Tbsp plum extract (or corn syrup)

Cooking Instructions
Step 1
First, gently pat dry the beef slices with paper towels to remove any excess moisture. (Thinly sliced cuts like sirloin are ideal for this recipe.)
Step 2
In a bowl, combine the beef with the ‘Beef Marinade’ ingredients: 2 Tbsp ‘Mihyang’ (or cooking wine/mirin), 1 Tbsp sugar, and 1 Tbsp plum extract. Mix well and let it marinate for about 10 minutes to allow the flavors to penetrate the meat. Marinating ensures a richer taste. (A little bit of liquid may be released from the beef during marination.)
Step 3
Prepare the vegetables: trim the base of the enoki mushrooms and roughly chop them into 3-4 pieces. Wash and peel the carrot and onion, then thinly slice them into julienne. Slice the garlic thinly.
Step 4
Heat about 1 Tbsp of cooking oil in a pan over medium-low heat. Add the julienned carrots and sliced onions and stir-fry until they become tender and slightly sweet. Cooking them slowly is key to releasing their natural sweetness.
Step 5
Once the vegetables are tender, add the ‘Vegetable Stir-fry Seasoning’: 1 Tbsp soy sauce and 1 Tbsp sugar. Stir-fry until the seasoning is evenly distributed. Finally, add 0.5 Tbsp of potato starch and mix quickly to coat the vegetables, giving them a glossy finish.
Step 6
Now, it’s time to fry the garlic. Place the thinly sliced garlic in a dry pan and cook over low heat, or add enough cooking oil to a pan over low heat and fry until golden. Be careful not to burn the garlic. (Slowly cooking on low heat preserves the garlic’s aroma.)
Step 7
When frying the garlic, start over medium heat to get a light sear, then reduce to low heat and fry until golden brown and crispy on both sides. This process infuses the oil with a wonderful garlic flavor.
Step 8
Using the garlic-infused oil, add only the marinated beef (discarding any liquid from the marinating bowl). Turn the heat to high and quickly separate the beef slices with chopsticks or a spatula to prevent clumping as it cooks. Stir-fry rapidly.
Step 9
When the beef is about 80% cooked, season with a pinch of salt and pepper. Spread the beef thinly in the pan as it cooks to achieve a crispier texture.
Step 10
Finally, add the remaining 1 Tbsp of potato starch and stir-fry quickly over high heat. The potato starch will coat the beef, creating a delightful crispy exterior and a tender interior – your ‘Crispy Bulgogi’ is ready! Serve it with the stir-fried vegetables and enjoy.
